Ingredients -

about 20-25 live mussels
3 cloves finely chopped fresh garlic
3-4 tablespoons dried parsley
1.5-2 tablespoons dried red pepper
1 teaspoon dried oregano
Juice of 1 fresh lemon
Virgin Olive Oil (don't use the good stuff)
1/4 stick of butter
1/2 cup dry white wine (I use chablis)

Coat the bottom of the pan with the oil, adding just a slight bit more. Add the finely chopped garlic and your dry ingredients, and place atop a high flame. When the garlic starts to brown, add the wine slowly (be careful of flames), then add the mussels, placing atop your butter and then pour in your fresh lemon juice. Cover the pan with another pan or a cover, and cook until all mussels have opened. When opened, pour into a bowl, and garnish with some parsley or with a some fresh grated parmesan cheese.
