Thanks to MCS, I have the recipe for flaxseed bars. However, I am having a hard time finding the ingredients. The only food stores close by are Kroger, Food Lion and Walmart. Kroger has flaxseed but no buckwheat of any kind.

Also, finding unsalted sunflower seeds have been unsuccessful. I did find them online, but will check the Fresh Market and Publix next week when I go into Savannah. I am really looking forward to trying these bars!

I think you'll like 'em, Brenda . . . I sure get a lotta mileage out of 'em! :D

And sometimes I use salted sunflower seeds - doesn't seem to matter.

If you are going to Publix, they will have everything you need. The dry goods are usually by the produce. I use the salted sunflower seeds too. The buckwheat will be in the specialty isle near the organic foods. Also Publix carrys green cooking bananas. I am starting to sound like an add for Publix.

Many variations but this is the jist of it:

Blend in good blender

2 - 7oz packs of unsweetened prunes
3 - large eggs
3 - very unripe bananas ( if they peel they are to ripe )
- enough water to keep blender running

Place the batter in a mixing bowl and add

1 - cup Whole Flax seed
1 - cup Flax Meal
1 - cup of Buckwheat
1 - cup of Sunflower seeds
1 - 8oz pack of Walnuts crushed
1 - tsp of baking powder
1 - tsp of Baking soda

add water as needed to blend, batter is pretty thick and spreadable.

You can add Vanil, Cinn, or other spices you may like here. I liked them with Splenda, but ate to many, and had some gastro issues with that much Splenda. I remember some one was going to try adding Cocao, never heard back from them, so do not know how they turned out.

Wife likes them with 1 - cup of Splenda mixed in.

I spread them out on a large cookie sheet with parchment paper underneath, cook at 350 for 20-30 minutes depending on the thickness of your mix.

I spiked to 130-140 on 3-4 of these the first time I ate them. Then never went higher than 120 afterwards and usually lower.

Have not had any of these in a while, but all the talk was getting me back in the mood for some more. Put a twist on the recipe though.

- eye balled it but think it was a little under 1/4 cup of Blue Agvae syrup.- enough water to keep blender running

Place the batter in a mixing bowl and add

1 - cup Whole Flax seed
1 - cup Flax Meal
1 - cup of Buckwheat
1 - cup of Hi-Maize 260
1 - cup of Sunflower seeds
1 - 8oz pack of Walnuts crushed
1 - tsp of baking powder
1 - tsp of Baking soda

added very little water to blend, batter was real thick and I had to spread with hands
I added Vanil, Cinn,

I spread them out on a large cookie sheet with parchment paper underneath, cook at 350 for nearly 40 minutes. They came out hard and some what crunchy on the edges, (just how I like em) Cut these into 24 pieces instead of 32 so they are a larger portion size.

Two of them last night didn't budge me BG wise. So I thought I would try two of them for breakfast, went to 160 in an hour, back to 105 in 2hrs and 93 in 3hrs. I hadn't seen 160 in quite some time. I feel as though I am catching something health wise so maybe not the best time to test breakfast foods, but I recovered quickly.

Oh by the way, they are quite tasty, very good and satisfying.
