this week's lower-carb, non-noodle soup ... is also Asian-style, in this case Southeast Asian:

oil about 1 Tbs
ginger, garlic
4 dried black mushrooms
1/4 cabbage
1 -2 tomatoes
1/2 onion
2 small zucchini
1 can of Libbey's pumpkin
1/4 c natural peanut butter
2 pieces of dry tofu (tofu kan, baked tofu), diced; of course you could use chicken, or meatballs or ...

to pass at table:
dry-roasted peanuts
a lime, cut in eighths
cilantro, chopped
scallions sliced
mint
basil
soy sauce
hot chili sauce! (sriracha or sambal or even tabasco)

It is still simmering on my stove, but my son declares he is ready to eat anytime!

I sooooo agree,Foxl. I made a pot of vegetable soup yesterday. I used a small beef roast(sorry),stewed it for 2-3 hours in water,onions,salt,pepper & beef boullion.When done, I added some pureed fresh tomatoes that DH got from the garden,( the last I am afraid)a very large bag of stir fry vegetables and simmered for another hour. Should be good for lunches all week.

I use pork neck bones and simmer them for 3-4 hours in low sodium chicken broth till the meat falls off the bones. Add some diakon and winter melon, bok choy and any other chinese greens that you like. Great soup.

You might be interested in checking out Shirataki Noodles. A 4 ounce serving has 3 g carb with 2 g fiber and only 20 calories. They are available at Whole Foods and Trader Joes by the tofu and tempeh in the refrigerated section.

Oh, this soup was GOOOD, too! With the hot sauce and mint ...

I will make some variant of it next weekend, too.

The peanut butter and the pumpkin combined gave it a good deal of body so it was fairly thick.

And it hardly budged my blood sugar -- at one hour, 110, and quite low this morning -- 93, when recently I have been running high in the morning.

I could live on soups ;-D

My favorite soup is carby - split pea. I like it really thick, with bacon or ham. I made some on Thursday night and I still smell it as soon as I walk into my apartment. Better than smelling the cat box...
