Slow-Cooked Pineapple Chili
from From Wegmans Menu Magazine
time 4-8 hrs, 10 min active yield 11 cups

ingredients
1 lb Food You Feel Good About 85% Lean Ground Beef
2 pkgs (8 oz each) Food You Feel Good About Diced Green Peppers & Onions 1 1/2 cups Bolthouse Farms Matchstix Carrots (about 5 oz)
1 1/2 cups Bolthouse Farms Matchstix Carrots (about 5 oz) 1 can (28 oz) Italian Classics Crushed Tomatoes with Herbs
2 cans (15.5 oz each) dark kidney beans, drained
1 can (8 oz) Food You Feel Good About Crushed Pineapple, drained 2 Tbsp chili powder
Salt and pepper to taste

directions
1. Brown ground beef in skillet on MEDIUM, breaking up meat with spoon as it cooks. Drain off excess drippings.
2. Add beef, peppers and onions, carrots, mushrooms, tomatoes, beans, pineapple, and chili powder to slow cooker. Stir and cover. Cook 4 hours on HIGH or 8 hours on LOW. Season to taste with salt and pepper.

notes:
• You'll Need: 6-8 qt slow cooker
• Optional: Top with shredded chedder cheese
• Nutrition: Each serving (1 cup) contains 220
calories, 25 g carbohydrate, (7 g fiber), 15 g protein, 6 g fat, (3 g saturated fat), 30 mg cholesterol, and 390 mg sodium.
• Lactose Free, High Fiber, Gluten Free


I'm making this tonight, and I'm pretty exited, so I thought I'd share. Doesn't seem too bad on the carbs if you're not a die-hard low carber. I'm sub'ing ground turkey for the beef and skipping the mushrooms (cause they're gross). A lot of the brands are Wegmans specific, since that's where I got this recipe, but obviously any brands would work.

This might just work for me too! I can get by with pineapple when I make my "pink stuff" . . . why not in chili?! Sure sounds good!

Twas awesome. Highly recommend. Just make sure you get the can sizes right. I put twice as much pineapple in and almost put in extra peppers and onions. I was like, "Huh, this isn't all gonna fit in here."

And don't forget the chili powder.
