I don't have too much of an issue in finding something to eat for breakfast, but I have a very hard time determining what to eat for lunch. It always seems to be either a sandwich on Whole Wheat (20g carbs) or a salad for me.
I'm getting very tired of the same two options.
So, what did/do YOU have for lunch? :)

Today I'm having some leftover chili I made over the weekend! Lovely warm lunch for a cool, rainy day. (I get tired of lunchtime sandwiches OR salads too!)
My "formula,"
1 oz nuts or seeds
1 oz cheese
1 fake meat, leftover "dish" if possible, with or without a pita or a tortilla wrap.
1 85 - 100 g salad, greens and dressing, or cabbage and dressing.
Sounds boring but not bad -- I roast and season my own nuts so always different, the cheese is quite varied and GOOD stuff, the fake meat is usually gussied up in a sauce.

ummm abt an hr ago had tuna (plain no condiments) on 2 slices os sara lee delightfully wheat bread
and ummm still hungry sooo i plan on having some ramen noodles when i go on my actual lunch break here sometime soon
oh yeah my lunchtime break drink will be sugar free hawaiin punch lemonberry (they have a whole line of to go packets 8 for $1 at walmart, my favs are teh grape and lemonberry, the blue stuff is ok, orange stuff is ok and the fruit punch, not my style, however my friends 7 yr old likes it)

I made a salad this morning for my sack lunch using a pre-mixed bag of lettuce types, some cut-up cucumber, radishes, (dang, I just realized I forgot to add spring onions), sunflower nuts, some real bacon bits, half a small diced tomato, some Kens 1 carb blue cheese dressing. I usually keep all the ingredients in tiny seperate ziploc storage bowls and mix together right before eating to keep it from getting mushy.
For dessert, a small container of strawberry/banana sugar free jello with some slices of real banana in it.
I bolus'd 3u for the meal and usually find myself at around 100 2 hrs PP with this meal.
I enjoy this meal 2 - 3 times a week for lunch and have been doing it since June and still not tired of it. I never thought I'd love salads so much. (There's that "never" word again! Slap me silly!) Sometimes I'll add grilled chicken chunks to it if I have some leftover.

Not lunchtime here yet, but I will have Amy's minestrone soup. I am sure I will have tea after lunch and raw almonds! It is actually raininig here today!!!!!

Today I had a burger, no bun, a sliced cucumber, and some s/f jello.
Other things I take for lunch: Hard boiled egg
Olives
Celery
My left over green beans and boneless beef spare ribs, its better every time you warm it up.

Do you put any kind of sauce on the spare ribs?
Today, I had a Chopped Chicken Cobb Salad from Panera. It wasn't bad, but it was "just another salad."
I think I bore of foods too easily. lol.

We have no stove, sink, table or anything in our kitchen right now....no way to cook but the microwave, no way to wash dishes, etc. But today Pat was craving eggs. I made us both poached eggs in the microwave in a small margarine bowl that I could toss. Low carb toast and we shared a tomato. The eggs were good, Pat said he would not mind them, even when we have the stove back. I had Turkey Hill diet green tea, which is fast becoming my favorite drink.
Made several pots of these in the past couple of months, thier easy to make and easy to reheat and they are very satisfying. I went to the store recently just to buy a pot to cook these properly.
Green Beans
Large Stock pot
1/2 stick butter
1 whole onion, no sweet onion
3-4 cloves garlic
1 green pepper choped
2-3 sticks celery chopped
cook till soft, then add 2lbs of thin sliced boneless beef spare ribs, brown on all sides
I then add 1, 3lb can of flat italian green beans, drained, 1 3lb can of regular green beans drained. Bring up the fluid level with low sodium beef stock. Cook covered for 20 minutes or so.
They reheat well, but do not re-cook, the onion and peppers will break down and give you a spike, other wise, I can eat till I am bursting at the seams and get little to no response.
I have also tried: Chuck Eye Steak, Chicken Steak, Mock Tender Steak, and Rib eyes, Sirloin doesn't do as well.

Mmmm, that sounds great. I don't have a stock pot, but I do have a CRock pot, and I bet a variation on this would work well in there as well.

I had
from "almost-organic" butcher
- five slices of Kielbasa
- 6 slices of peperoni
plus a chunk of Saputo marble cheese and a glass of water.
Pre was 6.6 mmol, bolused 5u novarapid, 2hr pp was 5.3 mmol, 4hr pp was 8.7 mmol. Just took another unit.

Today I had a chicken philly sandwhich which is served open-faced on a hoagie. I just didn't eat the hoagie. And, a side of grilled veggies on a skewer - mushrooms, onions, bell pepper, & cherry tomatoes. Don't have an exact carb count on this, but it's got to be low.
Yesterday's lunch was a Wendy's small chili & Caesar side salad. 19g of carbs for the chili & 5g for the salad because I left off the croutons for a total of 24.
Sometimes, I go to Subway & have a tuna salad salad with double meat. I rarely have dressing on this since it has mayo in the tuna salad, but there are some good choices.
I like to bring leftover grilled meats with steamed, roasted or grilled veggies so whenever we cook on the grill, we usually cook extra for lunches.
Failing time, $$$, or leftovers on hand, I always keep cottage cheese, fruit, and nuts in the office, as well as a selection of cheeses.

morning star veggie burger ( pizza flavor) no bread, just lettuce & a tom, maybe a cuke too 7g carbs per burger.

I hate to do it, but I'm turning this thread into a confessional session. I"ve been very busy recently with buying a new house/preparing to move/getting work done on the new house so over the last week or so I've eaten out for lunch a few times. which is very abnormal for me. Today I went in to a burrito restaurant with every intention of just getting the ingredients thrown in the bowl without the rice or tortilla. But then I caved while in line and bought the burrito but left the rice off. Of course the white flour huge tortilla plus black beans has spiked my BG to it's current level of 226. Now I imagine I'll overcorrect and have to fight a low in about 3 hours. Why do I do these things when I know it will have an adverse affect and set me up for a BG roller coaster ride? That's a rhetorical question. OK, better choices tomorrow-no using busy-ness as an excuse for poor choices.

Yesterday we went to Picadilly. I always get unsweetened iced tea, broccoli and a fruit cup and usually roast chicken breast, time before it was baked fish. But their chicken is so good. And as long as we are confessing things we knew better than to get and got anyway...um...garlic bread...that's ... gasp...white bread! And then we walked for about a half hour so I didn't stress about it. Plus the dr's instruction to only test in the morning makes me feel like I can eat anything I want. He wants my blood pressure 3 times a day and only one bg. Whatever makes him happy.
Today I have to think lean if I'm ever going to lose these last 7-10 pounds. low carb and lean, hmmm.

Tell me about it! I've been fudging a little here & there this week, but last night I went totally ape-xxxx with homemade bbq beef on a seeded hoagie bun & homemade french fries (yes - big ol' russet potatoes :eek:). Spiked to 180, but was back down to 118 by bedtime.
As Lark sez . . . "Why do I do these things when I know . . . " I could kick myself to Kingdom Come! :mad: :mad: :mad:

I'm a T1 so I definitely need to test more than that, but always keep in mind that it's your body and not your dr.'s. I'm sure you posted that somewhat tounge in cheek, but you might enjoy seeing the results of postprandial testing (2 hrs. after a meal) to see the effects of garlic bread or other items. My doc has some odd agenda to encourage me to test less as well (I avg. 10-14/day), and I am more than happy to completely ignore his advice. Whatever makes me healthy!

We ALL do these things on occasion because we're all very much human. I personally feel it is unrealistic to say i'll never again have a burrito/french fries/garlic bread because i'm diabetic. We're just setting ourselves up for failure that way.
We just have to reach a balance, having these only on occasion, and when we do, losing the guilt (unless it's an every day or weekly occurrence). The guilt is counterproductive. We do our best, fall, get up and go on.
Back on topic...Lunch today: Grilled chicken in a low carb wrap w/lettuce, cheese and spicy mustard, with 7 Lay's potato chips--it's true, no one can eat just one! (7 is the amount which I have found I can have on occasion w/o problems). Bottle of water to drink.

I had a salad from my local grocer's salad bar. It was OK, but still "just another salad." :P
Lettuce, tomato, cheese, cucumber, sunflower seeds, bacon, grilled chicken, and ranch dressing. I may have missed something. They were out of egg today! :( hehe.

Usually lean meat and a veggie. Water Today I had a pile of stewed cabbage and water....not very exciting I am afraid.:T

Today, I had black bean soup at a local Mexican eatery. It's a large portion so I asked them to serve half & put half in a carryout container.
Although beans are higher carb than much of what I eat, I estimate that the soup was 2/3 cup & with chicken broth, onions, cilantro, & tomatoes, so I probably had 25 grams of carb total.
One hour after first bite BG = 109.

Poppy, I LOVE cabbage - cole slaw, stir fried with onions & hot peppers, even steamed with a little bacon or ham for seasoning. Yum! Good cold weather eating ...
Celery, on the other hand .... you couldn't pay me to eat that stuff ...
