I made this last night, so I can confirm that this works.
For all my denigration of fast food, I adore KFC and would happily eat an all-KFC diet if I didn't think it would kill me. Here's how to make it at home - seriously, this works. It really does. Oh, and it's not particularly healthy but you already knew that. Also gives you an idea of what you're actually eating if you buy KFC.
You will need:
5 chicken thighs
5 chicken wings
Milk
Flour
And then, the clever bit:
1 teaspoon ground oregano
1 teaspoon chilli powder
1 teaspoon ground sage
1 teaspoon dried basil
1 teaspoon dried marjoram
1 teaspoon pepper
2 teaspoons salt
1 teaspoon paprika
1 teaspoon onion salt
1 teaspoon garlic powder
2 tablespoons MSG
Yes, MSG. That's the essential secret ingredient. If you're worried whether MSG is bad for you or not, you're probably not trying to cook KFC in your own kitchen anyway.
Now here's what you do:
The night before:
Put all the chicken in a big pot filled with milk. Leave it to marinade overnight.
On the (happy) day.
Poach the chicken in the milk marinade - it takes roughly 20 minutes but use your discretion here.
Meanwhile, chuck all the herbs and MSG into a grinder, and then add it to some flour (there should be enough flour to make a mostly white but slightly orange-tinged pile). If you've not got a grinder, put the herbs and flour in a blender to get much the same result.
Remove the chicken from the milk and then roll it around in the flour until it's coated. Now here's the clever bit. Dip the coated chicken in milk and then coat it AGAIN.
Now here comes the fun bit.
If you've got a deep fat fryer, fire it up. If not, chuck a load of oil in a saucepan and heat until it's really, really hot.
Then chuck each piece of chicken in - leave them in for 1-2 minutes. Longer makes it crispier and less like KFC in texture but it still tastes great.
Remove the chicken onto some kitchen towel to let it drain off.
Garnish and serve.
It's yummy and it really, really works. Enjoy. I did.
