Zucchini Hash Browns

24 g carbs total recipe

1 1/2 pounds zucchini
1/2 teaspoon salt
2 eggs
6 tablespoons Parmesan cheese, grated
1 garlic clove, minced or pressed
1/4 cup butter

Coarsely shred zucchini (you should have about 4 cups) and combine with salt in a medium-size bowl. Let stand for 15 minutes. Squeeze with your hands to press out moisture.

Stir in eggs, cheese and garlic.

Melt 2 tablespoons of the butter in a wide frying pan over medium-high heat. Mound about 2 tablespoons of the zucchini mixture in pan; flatten slightly to make a patty. Repeat until pan is filled, but don't crowd patties in pan. Cook patties, turning once, until golden on both sides (about 6 minutes).

Lift out and arrange on a warm platter; keep warm.

Repeat to cook remaining zucchini mixture, adding more butter as needed.

yummm.... sounds good. I will have to try them. I have some zucchini right now so I will probally make these tommorrow for lunch. I used to love potato hash browns. I hope I can cook them right. Varitey of foods is what I need. Wish me luck!

I made these zucchini hash browns last night. They were soooo gooood! The first batch were a bit messy but I quickly became a pro and the rest of them looked great. Thanks Lynne!!

This way of eating can be fantastic, we need to search our tastes and talents to see how we can beat diabetes. This is a standard favourite in our kitchen! I plan to become healthier than I would have been if I had not been diagnosed and had continued to ignore the high numbers of carbs in my previous diet.

Lynne..I made the Hash browns this morning..wow Tom and I are very impressed..they were awesome...I have a good size veggie garden and this year I wont be planting squash but will be adding a plant or two of zucchini :thumbsup: Thanks for the Recipe
Now if I could find a bread recipe that dont call for flour I would be a very happy camper..I love my Bread this is my down fall :(
