I have too many pears right now ( friend has a pear tree) & they were starting to go off, before she comes around to make jam, I decided to use a few for desert.
Core & peel pears, cut in half, put in pan with water enough to cover & 2 spoons of splenda.
After they are soft enough, take out of water & sprinkle with nutmeg & cinnamon. serve with your favorite sf topping. I like these so much I think I will make more, as they would also be a handy side dish with ham, one small pear has about 18 carbs, a medium pear, 25 carbs, according to calorie king, so I will only be eating a half at a time.

Yum. I haven't tried pears yet since Dx. Maybe I'll have to do so.
I've found apples do spike me, so try to avoid them & am pretty successful. However, do you know how hard it is when they're literally blown into your path? LOL
There was a storm this weekend & when I walked outside, there were 2 apples within feet of my front door that had been blown off the apple tree that's just on the other side of the fence. One was smashed & therefore unappealing, but the other one, so nice & shiny & big & red & sweet-looking, is still sitting there taunting me. I want to make it into homemade chunky applesauce (more like pie filling, actually) like my grandpa used to make (with splenda instead of sugar of course) but so far have resisted.

I'm not sure yet what really spikes me, other than white bread, as I am still new to all this, but pears do not seem to have a detrimental effect on me, which is good. I had a quarter one last night for desert with cream cheese & equal, oh yum :)

I just might...I keep hoping that the ants will find the apple laying on the ground & be lured out of the house to it! LOL.
As for spikes, just keep following the often heard: Test, eat, test, learn. You'll figure it all out soon enough. Enjoy the pears!

Poaching is wrong! If the sheriff catches you, you may end up in jail. ;)
Too many pears!? And I am sitting here looking for a source to get pear juice to ferment into a yummy beverage called Pearry (like hard cider). No one near by has any. I am jealous!
