Well with Halloween very close...and three pumpkins in my garage just waiting to be carved...I wondered about pumpkin seeds and everyone's experience with them.
This will be my first Halloween with D...and I'll certainly be roasting up all those delicious seeds.
I read online that roughly 140 seeds have about 2.5 g of net carbs...but I'm wondering if you could chime in and let me know how pumpkin seeds affect your BS?
Do they spike you? Do you bolus for them?
I adore fresh, salted, roasted pumpkin seeds.
Don't have any answers for you, but they sound good, first season with T2, I guess I will find out soon enough.

I eat them raw because cooking reduces the benefits somewhat. Eat them all the time. Never a problem for me.

I may even try these seeds too. Sounds Delicious. ;):)
I like them, but I buy the shelled pepitas and pan-raoast them with spices and garlic. They are a terrific source of magnesium, which diabetics apparently need a higher amount of for unknown reasons.
Because I have been known to OD on the baked ones in the skin -- and they made me sick! Too much insoluble fiber for me, and I ended up, to put it delicately, with a clogged lower digestive tract!

yeah! the shelled pepitas are great. i make green beans with homemade pesto and top them with those. super delicious!
but, i can't resist the crunchy saltiness of the roasted ones with the skins still on. mmmm. drooling now.

I had my first pumpkin seeds a couple weeks ago. Bought a bag of roasted/salted ones. The instructions said you could shell them or eat them with the shell on. I ate them shell on, as it seemed a lot of trouble to shell them. They were quite good, and had only minimal effect on my blood sugar.

oooh....these turned out to be VERY evil on my blood sugar.
just FYI!
i had to take TWO very large corrections over a period of two hours. i only ate about half a cup, and bolused for them! eeeks!
anyway, just for reference's sake!

I have not tried pumpkin seeds since I was diagnosed, I will have to give them a try and get back with you on that. :dontknow:
