View Full Version : Roast Beef Hash

Sometimes I think it's worth fixing a beef roast just so we can have hash! :D :D :D

Equal parts butter & olive oil, combined in skillet & heated
1 large carrot, coarsely chopped
1/2 large onion, coarsely chopped
2 ribs celery, coarsely chopped
1/2 large green bell pepper, coarsely chopped
2 or 3 green bananas, coarsely chopped (or use potatoes here if your meter allows)
1˝ - 2 cups diced cooked roast beef
1 can condensed cream of mushroom soup
2 or 3 tbsp. worcestershire sauce
salt & fresh ground black pepper to taste
dash of ground red pepper (optional)

Sauté carrot, onion, celery, bell pepper & bananas in oil until tender/crisp & somewhat browned (color = flavor).

Add beef, soup, wooster & seasonings. Toss together gently & heat to serving temperature.

Hash is one of those terrific dishes that can be tweaked any way you like . . . if I'd had leftover gravy, I'd have used that instead of the condensed soup. If I'd had fresh mushrooms in the house, I'd have added those too. If I'd had chili peppers instead of bells, I'd prob'ly have used some of those too . . . :cool: Have fun!

Oh YEAH! Corned beef hash is tops! And there again, I think we fix corned beef & cabbage just so we can have hash! I grew up with CBH made from canned corned beef . . . dunno why Mom never fixed a brisket herself, but once I tried it with a real corned beef roast, there was no going back.

Thanks for adding this . . . I get a kick out of Alton Brown too! lol!

(and btw: a huge bowlful of the roast beef hash raised bg all of 19 points at the 1-hour mark. No complaints here)
