I had my gall bladder out at the end of august. Since then my blood sugars peak at 2.5 - 3 hours. I stay in the 5's the entire time then all of a sudden at 2.5 hour i'll be at 7.8 or something. I eat 3 meals a day plus one snack and nothing in between. Any ideas? I am going to see my GP on thursday but I was wonding if anyone else experienced this. its quite frustrating to me.
