I've just posted the recipe for my No-Bake Pumpkin Cheesecakes on my blog. These creamy and delicious mini-cheesecakes have less than 8 grams net carbs each! I hope you enjoy.

You have made me get out my "good" paper and once again copy your recipe.
The closer Thanksgiving dinner is away, the more (in my house) it's turning out to be "Chef B's" dinner. ;)
BTY: I am a true Danny (not Daniel), and my middle initial is K... I think it's really cool, but a lot of people these days can't appreciate........ I get it!......and love him too.!

I have a question, can I use agave instead of the molasses? I'm frugal wen it comes to shopping, & I have a bottle of agave, which is very reasonably priced at a local health food store, & I don't really want to buy a container of molasses for one recipe.
I love Danny kaye as a kid too ;)

No problem. I used a little bit of molasses just to make the splenda taste more like brown sugar. If you have dark agave use just a drop (it's so sweet) in place of the 1/4 tsp. molasses. If you have light agave, just omit it altogether. The pumpkin cheese will still be delish but just won't have that brown sugar background flavor. It should be just fine. Let me know.
