View Full Version : I need ideas, what is your favorite low-carb lunch and breakfast?

Hi all, am trying to find some foods which will not spike me and stick to them. Can you please let me know what your favorite (lowwwwww carbbbbbb) breakfast and lunch? Am going to be writing these down because my A1c was still not where it needed to be and i'm getting desperate to change my ways. My main problem is i snack at night :( Thanks in advance :)
I like Designer whey shakes for breakfast, which I make using reduced carb (2g per 8 oz) (and fat) 8th Continent Light soy milk. It seems to hold my appetite down, it is fast to make, and bland enough to not be annoying at 6 am.
Lunches ... there is all kinds of stuff. Salad is a good option, gets a serving of green veg in, and you can use the pre-washed greens or slaw, too.
I make a 'formula' lunch consisting of a salad or green veg, a meat substitute entree (I am ovo lacto vegetarian), an ounce of cheese and an ounce of nuts. Of course I vary the kind of ingredients in each case to prevent burning out, but it helps me to have a list to match to.
Pre-planning what and how much snack at night is what has helped me. A couple of squares of darkest chocolate after my workout is quite motivational!

Eggs & cheese are the nuts/bolts of my menus, and I've recently added hot wings to that. Having something handy that I don't have to prepare has really helped too, so I make bigger batches of things & keep refrigerated for quick access.
Hard-cooked eggs are a must. Mash 'em up with some mayo & mustard for a fast egg salad, or just slice/wedge 'em with a little salt/pepper.
Foxl posted this quiche-like casserole (http://www.diabetesforums.com/forum/recipes/45095-evil-green-chili-quichelike.html#post515323) that I'm using now for more quick access - I cut out the "hard part" she mentions by making it with diced chiles from a jar instead of roasting my own.
I'm making up batches of hot wings chicken for quick snacks or small meals. Just fry the chicken pieces until skin is crisp, and then douse 'em liberally with hot sauce of your choice. I usually take mine plain, but they're great with ranch or bleu cheese dip - just watch the labels on the dips.
Quesadillas made with low-carb tortillas & whatever mix of cheeses you like . . . these aren't instant access, but take less than five minutes. I place the tortilla in a warm skillet - sprinkle with the cheeses, bacon bits, salsa, diced chiles, etc., etc. on one side. Flip the other side over the filling & heat until cheese melts.
Beef sticks, cheese sticks and raw almonds are always kept nearby. And for that nighttime snack? I even keep beef sticks on my nightstand! :D :D :D
YEAH! Quesadillas! I rely on them and on omelettes, more than I own up to (still with the brainwashing from low-fat days? I dunno .... ). More for dinner on those two entrees, but YEAH!

Not to be the nay sayer but if your main problem is night time snacking why are you asking about breakfast and lunch?
Eating low carb breakfast and lunch then going crazy at night is like being a construction worker during the day and an arsonist at night .. you tear down what you've spent the day building up
Almost every morning I make a cereal by grinding flax seeds, stirring in hot water, and adding a good splash of cream. I won't say that it actually tastes good, but it doesn't taste bad, and it keeps me comfortable all morning. I don't use artificial sweeteners, but I imagine that if you do, it would probably taste better.

Granny, I recently tried hot wings "tequila lime" flavor, they are in the frozen section at wally world. They had little to no effect on my sugar too.
