Does anyone have any quick, easy, and cheap recipes? I've just been warming up a can of spinach and putting some tuna fish in it. 0 carbs, no sugar, tastes good, super-cheap, and fast.

I'm just getting kinda tired of it. :o

Anyone else like this?

Well, there's always those noodles but that's a ton of carbs.

Sometimes for lunch I'll scramble an egg and roll it up in a bit of ham. It's only got trace amounts of carbs.

Ryan, I don't recall if your a if your type 1 or 2. But the Diatician warned my to eat carbs as a type 2 and to that effect I was put on a 2000 cal diet. (man I'm starving :D ). I was told I must have 30 grams of cargs for breakfast. 15 as a snaq between lunch and breakfast. 60 grams of carb at lunch and 30 as an after lunch snaq.. then 40 at dinner and 30 again just before bedlum... I was also told you can hoard your fat and protein but not the carbs. The Carbs have to be eaten close to specified intervals or I'd pay for it!

That said, I like 3oz.polish sausage and pace picante sauce with cheese! and a few Tostitos (9) for a snack

can be made in the Nukum in (2) 30 sec cooks. heat he meet for 30sec and the souce and cheese and heat 30 sec.

Also found some smuckers preserve that has only 7carbs per table spoon to make a PBnJ with low carb bread (7carbs a slice)and PB (6 carbs a tbls) runs 27 carbs....

The info on 2k diet for me is designed for my size and age and weight but if it helps here are the basic's.. But though it might help as the Doc's left you hangin...

ME- 34 yrs, 180lbs, 5ft8in. average shape(soft in the middle but not fat)... :D

8oz protine a day,225 carbs (watch the fat contents)
Was warned to go easy on the meat and dairy as my cholesteral is a bit high.

free foods: I found and like so far:
green beens. (3cups max)
sugar free jello ( all you want) complete 0!
Diet DP is---- ok aspertam takes some getting used 2.
Diet pepsi is ---yukkkkkk
diet coke taste like shasta!

Most vegitables in the raw state: Bell peppers etc.
Salad with hillshire farms (green labeled bottle) regular dreesing (1or 2 carbs). no crackers is other carbs are being eaten. or a balance of both.

Was actually warend to stay away from LOW CARB and LOW FAT stuff. As not all but most, low carb foods usually add fat for flavor and low fat usually add carbs (sugar for flavor)... just can't win... :D

That seems like a lot of carbs.. is it? I try to eat very little as to watch my sugar level. But doing that AND keeping under 2000 calories seems impossible.

I know it seems like a lot ovf carbs but it's killin me..... Man do I get the cravens for a carbs samking piace of penut butter cake......... Actually it seems to be working prety well for me.My Bs is staying between 80 and 140 for the most part.....

Ryan, if you like salmon, try throwing a can in a salad with some fresh baby spinach. I like to put a teeny bit of light mayo as a dressing, and some sunflower seeds for flavour and texture. You can use canned tuna in place of the salmon if you'd rather. Depending on what you garnish your salad with, it's a very low carb, filling meal.
Quick, easy and cheap ;)

stuffed bellpeppers are good, tomato (diced) lil light mayo mixed with tuna or chicken some salt and pepper for seasoning. I also like egg in the mix but who wants to wait for and egg to boil?... and no bowl to wash :D maybe a few crackers for carbs if you want them...

I don't remember exactly, and I keep forgetting to check the package when I am at home, but I remember the whole reason I started getting them again was because I was looking for a cool snack treat. I started buying them just after being diagnosed, and back then I was hyper-sugar-paranoid. I will try and remember to check tonight!

Oh yeah you bet'cha, they sell them in giant boxes of like 50 at Costco (local warehouse store), or I can get them at the "regular" grocery store in smaller packs!

First of all, I can't imagine eating spinach and tuna every day. Wow, you must have a strong stomach. Second, are you aware that the EPA recommends we eat only one serving of tuna a week due to levels of mercury found in fish. You can read these recommendations at

www.epa.gov/waterscience/fishadvice/advice.html

The above advisory is for women... I can't find the recommendation for men (I didn't look very hard, but I know that it is not more than 2x a week). The advisories don't necessarily list tuna, but other health agencies have listed tuna as having one of the highest contents of mercury and PCB's.

Anyway, I don't actually have suggestions for meal plans, but my mouth dropped when I read your post.

For me one tablespoon of tuna is good once a year..not a lover of the stuff...
I just cant think of any thing different for breakfasts any more..the toast and cereal is getting dull..i did make s good dish the other Am..some cottage cheese with a half of sliced banana and home made maple syrup on top and it was very tasty..has a half of pita bread with it...

That certainly cramps my diet now. Just when you find something you can stomach at a decent price, you find out it'll kill you. :(

Heat 1 tablespoon olive oil, add 1 clove minced garlic, a teaspoon pine nuts. Stir 1 minute, add 1-2 cans spinach (well rinsed, drained) and turn off the heat, let the spinach soak up the hot oil. Squeeze half a lemon over the spinach (or splash with your favorite vinegar).

triple rinse & drain 1 can of light red kidney beans, or cannellini beans. Put into a large bowl, add 1 can of tuna fillet packed in olive oil and 1/2 a red onion, diced. Season with paprika and black pepper, add more extra virgin olive oil. Good as a cold salad, also good 'smashed' as a spread on whole wheat pita bread.

Quick, easy, cheap.

Beany Taco Goodness

1 can kidney beans
3 tablespoons tomato salsa
shredded lettuce
grated low fat cheese
grated carrot
Taco shells

Put the taco shells in the oven on low to warm up
Drain the kidney beans and put in a pan with the salsa - stir until hot
Spoon kidney bean mix into shells, then lettuce, carrot and cheese.

Yum yum. Put any left over beans, lettuce, carrot or cheese on a plate, mix it up and call it a side salad.

This ones a fave of mine at the moment. Very tasty and pretty healthy too! And it takes all of 5 minutes to prepare.

OR

Yummy Vegie Pizzas

small pita/lebanese flat breads
tomato paste
diced capsicum
sliced mushrooms
pineapple pieces
tinned diced tomatos (strain them!)
grated low fat cheese

Chop/dice/grate your ingrediants
Spread the pita bread with tomato paste.
spread the diced tomatoes on top
add capsicum, mushrooms and pineapple pieces
sprinkle with low fat cheese
put in the oven on medium for around 15 minutes or until it smells so good you cant hold out any longer.

This ones really good too, I had this for dinner tonight. Of course you can alter the ingrediants to pretty much whatever you like, but this version is pretty low in fat and high in vegies! I made up 5 and froze the extras. Now thats gotta be a time saver!

OR

Chicken Cashew Tastiness

1 chicken breast
handful unsalted cashews
bag of frozen vegies
some kind of stir fry sauce sachet
rice (optional)

Dice the chicken breast
If your having rice with it, put this on to cook first.
Put chicken in a fry pan, cook then remove from pan. Set aside.
put frozen vegies and cashews in pan, cook, add sauce.
put chicken back in for a final heat up.
whack it on a plate with the rice if desired, and yummo, stir fry goodness!

Now, this one can be a bit more expensive as it involves chicken, but using less chicken and more vegies means that you get more out of it for less, and you top up your vegie intake too! This one freezes really well, so I normally make up a few meals out of the one chicken breast.

Ok, one more

Macho Nachos

Plain corn chips
tin of kidney beans
tomato salsa
grated low fat cheese
low fat sour cream

Drain and rinse kidney beans
put a layer of corn chips on a plate
spoon a good amount of kidney beans on top
add plenty of tomato salsa
sprinkle some cheese on top (or smother it on, up to you)
Microwave for about 2 minutes
add a dollop of sour cream

So this is quick and cheap, but a bit higher in fat. A good treat for every now and then. And if you go easy on the amount of chips, cheese and sour cream you use, its really not all that bad.
