Here is a few I found to be quite good. Now keep in mind I said low carb. This doesn't mean it's low in other areas.

HAM FRITTATA

6 eggs, beaten
1 1/2 c. cooked cubed potatoes
Smoked Ham, cubed
1/3 c. sliced green onion (I never used)
Salt
Pepper
Butter
1/2 c. shredded sharp cheddar cheese (I used more)

In large bowl, cobine all ingredients except butter and cheese; mix well. Melt butter in skillet. Add egg mixture; stir well and cook 2 minutes, patting ingredients into one layer. Reduce heat; cover and cook 6 minutes. Rotate or tilt pan to let uncooked egg mixture flow to outer edges of Frittata. Cover and cook anothe 6 minutes or until set. Sprinkle with cheese and let stand until cheese melts. Makes 6 servings.

Serving size:1 piece (?) calories: 122, protein: 16g, carbs: 8g, fat: 6g, sodium: 818mg, cholesterol: 17mg.

CHICKEN SALAD WRAPS

1-6 inch flour tortilla
1/2 c. diced cooked chicken
1 tbsp. light mayo
1 tsp. honey mustard or dijon mustard
1 lettuce leaf

In bowl combine chicken, mayo and mustard until blended.Line tortilla with lettuce leaf and top with chicken mixture. Serves 1.

Calories: 113, protein: 13g, carbs: 3g, fat: 6g, sodium: 408mg, cholesterol: 30mg.

CHUNKY CHICKEN NACHOS

1 c. cooked, diced chicken
4 c. tortilla chips
1 1/2 c. shredded taco cheese (I have used more)
1/3 c. salsa
1/4 c. pitted ripe olives

Arrange chips on platter. Top with 1 cup of cheese, chicken, salsa, olives and remaining cheese. Microwave on high 3-4 minutes or until cheese is melted, turning platter halfway through cooking time. Serves 6.

Serving size: 1 cup, calories; 208, protein: 13g, carbs: 14g, fat: 13g, sodium: 459mg, cholesterol: 40mg.
