This bar is extremely popular in Canada at Christmas time, although it is NOT low fat. Warning! Highly addictive!
FIRST LAYER
1/2 cup butter
1/4 cup Splenda
5 tbsp cocoa
1 egg - beaten
2 cups almond flour
1 cup unsweetened flaked coconut
Melt the first three ingredients in top of a double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in almond flour, coconut. Press firmly into an ungreased 8 x 8 pan. Cool.
SECOND LAYER
1/2 cup butter
2 tbsp and 2 tsp of cream (heavy cream like whipping cream)
2 tbsp vanilla custard powder (americans you won't find this in your stores it's english, so you can subsitute sugar free vanilla pudding powder)
2 cups splenda
Cream butter, cream, vanilla powder and splenda together well. Beat until light. Spread over bottom layer.
THIRD LAYER
4 squares (1 oz each) of semi sweet chocolate (or you could use 4 oz of your favorite low carb chocolate bar)
2 tbsp butter
Melt chocolate and butter over low heat. Cool, when cool but still liquid pour over second layer and chill in fridge.
Total carb count of about 215 g for whole recipe, which at 32 services gives you 6.6 carbs per piece
