The following used to be my staple diet and was great because all these raw veggies went towards my '5 a day'. I'd be interested to know if it's still a good recipe following my Type-2 diagnosis or what changes you'd recommend?

(Serves two to three people)


1 x small tin of Sweetcorn - I go for the 'No added salt or sugar' variety (16.7g of carbohydrate per 100g, of which 3.8g is sugars)
½ Red pepper (some of you may know peppers as 'capsicums'?)
½ Green pepper
½ Cucumber
About two dozen red seedless grapes
One teacup of rice (which ever variety you prefer - personally I like wild rice)
One small tub of salad cress


Chop all the vegetables, including the grapes and place in a bowl. Cook the rice then rinse and allow to cool before mixing with the chopped vegetables.

Dressing (optional)

Two cloves of fresh garlic (crushed)
One teaspoon of French mustard (I guess any mild mustard would do)
6 tablespoons of olive oil
3 tablespoons of red wine vinegar


I guess the things I'm not sure about are the grapes (source of fructose?) and the rice (I still haven't figured out this carb stuff - don't see the dietician for another month).

I used to wash a helping of the above down with a nice bottle of real cider, but nowdays that's sparkling mineral water! :wavey:
