Hi All - :wavey:

I'm wondering what those of you on a low carb diet typically eat. Would you post a typical day's diet so I can get some ideas?

Thanks!

I tried for a while, here is an example of what I ate:

breakfast: three scrambled egg whites, with red and green bell peppers and mushrooms, chilli powder and a tsp of low fat cream cheese melted on top. coffee with skim milk and a dash of rum extract

snack: small handful of almonds, celery sticks, carrots sticks, water to drink

lunch: whole wheat tortilla filled with lean chicken breast chopped with hot sauce, red onion, sesame seeds, chopped fresh spinach, light feta cheese and broccoli sprouts. side of apple slices. water to drink, or crystal light

snack: plain soy nuts that I pre-roasted with cinnamon and splenda. a small fruit (pear, or 1/2 banana)

dinner: home-made turkey kabobs with red onion slices, mushrooms, bell peppers, glazed in mustard and splenda sauce. side of cucumber salad (slided cucumbers with dill, parsley and low fat ranch dressing). I used to add some wild rice as well, mixed with brown rice, or carrots roasted with sweet potatos and mashed with garlic.

snack for watching movies at night: peanuts in the shell- keeps you busy so you eat less.

Breakfast...........either an omelet, scrambled eggs, toasted light wheat bread with peanut butter, Special K Protein Plus with Hood's Carb Countdown milk.

Lunch.........any meat and veggie I prepared the night before for dinner, or a salad with grilled chicken, ham & cheese sandwich in a honey oat pita bread, tuna on light wheat bread.

Dinner...........usually chicken or any lean meat, fresh steamed veggies and a salad. On occasion, I'll make a BLT (minus the T for me) or a grilled cheese on light wheat with a pickle on the side.

Snacks.........walnuts, almonds, pecans, s/f jello or pudding, 5 Ritz wheat crackers with peanut butter or cream cheese, baby carrots, carb countdown yogurt cup.

low fat splenda sweetened yogurt is good too for a snack (Silhouette, or Source brands), sprinkled with crushed walnuts or almond slivers.
