Hello all,

I was thinking the other night how if not for diabetes I would have never tried and enjoyed:

whole wheat pasta, broccoli, or spinach.

Any one else have any nice surprises/silver linings?

I probably would have eaten so much Fast food, probably been real heavy, and not watched or been careful of all the health problems.

I was always bad about eating vegetables and it's only now (19 years after dx) that I'm finally starting to try new things. I recently discovered edamame and can eat that every day. Also salads with all kinds of interesting mixed greens - before I was basically a lettuce + cucumber salad person. High fiber cereals like All Bran, which I never would have touched in the past.

I can barely believe that I'm about to type this, but brussels sprouts. I've always liked veggies, but I'd never been a big fan of brussels sprouts. After I was diagnosed, though, and began eating a lot more vegetables than before, I tried different kinds and different ways of preparing veggies to keep my meals interesting. It was not a surprise that I liked most of my experiements, but frankly I was shocked to discover that I found fresh brussels sprouts, baked with various spices, to be quite delicious. Who knew?

Tiny fresh, not overcooked brussells sprouts, sprayed with some "I Can't Believe It Isn't Butter" spray and a little salt and pepper...Yum!

No, no, no. Brussels sprouts are horrible. They taste like ear wax.

Oh Deus, you are overcooking them! They need to almost crunch.

Cauliflower and broccoli coooked together, just a little shredded cheese! Val, I have not tried the cauliflower mashed, do you add anything?

Penny is right on the mark -- brussels sprouts should be prepared to the point where they almost crunch. That's impossible with frozen brussels sprouts, which upon reflection are the only kind I'd ever had before. But fresh brussels sprouts really are a whole new world. Not that I ever thought I'd be defending brussels sprouts of any type . . . I'm still trying to figure out a way to make squash palatable, but someday I might get there.

I'm still trying to figure out a way to make squash palatable, but someday I might get there.

Have you tried butternut squash? You can make "french fries" out of it. Peel the squash, remove the seeds, cut it into fry shaped sticks, spritz with a little oil or cooking spray and bake. You can do the same thing by slicing them thin and making chips. I've had spaghetti squash which is okay, but Butternut is my favorite, If you like sweet potatoes/yams, you'd probably like Butternut squash.

I adore my white bread and couldn't believe I would have to eat wholegrain. 6 months later and I am having a passionate love affair with wholegrain bread and have left the bland, tasteless boring white bread and kicked it to the gutter. :D

And I bought a George Foreman health grill and realised I actually can cook! Man that thing is cool - it never burns my fish or chicken and I am even learning marinades from Weight Watchers that make the tastes better than KFC (If I say it enough it becomes true). I cooked one today where I marinaded chicken breasts in lemon juice and wholegrain mustard. Yummmmmy

I found this on Wikipedia:
"Whole grains are cereal grains which retain the bran and germ as well as the endosperm, in contrast to refined grains which retain only the endosperm. Whole meal products are made from whole grain flour."

To me, it sounds like the same thing.

Here in the USA, Wonder Bread (the blandest of all breads) now makes a whole grain white bread. It's denser than their normal doughy bread and actually has 2g of fiber per slice. Now when I want white bread (for peanut butter sandwiches... love it on white) I get that. I do love wheat, rye and other whole grain breads as well.

I love my George Foreman grill too. Cooks everything quickly, don't have to stand over the stove and watch it. I even make grilled cheese sandwiches in mine. On Wonder whole grain white bread!

Is Rye Bread considered whole grain? Yahoo! I love rye bread.

I didn't know the foreman grill was so handy. Hmmm.

Real rye bread or pumpernickel (my favorite) has so many carbs. I got the rest of my family to eat the whole grain Wonder, and they like it....I stick to the low carb breads.

Thanks for the tip re baked butternut squash fries/chips, Liz. I'll try it this weekend if I can find it (I'm not a squash connoisseur, so different tpes of squash have to be precisely labeled at the grocery store for me to know which is which!). I'm finding that I like baked vegetables of all types, though, which is another post-diagnosis discovery. I used to have vegetables raw or steamed, but varying the cooking methods really does keep things more interesting. Mashes of winter vegetables (especially beets) can also be very yummy.
