You know I read somewhere (probably in a very sensationalist paper or magazine) that American women consume 1/3 of their fat and cholesterol from SALAD DRESSING. Put down the salad, the steak is better for you!

Hey,
There's lots of misinformation out there about fats so thought i'd share something most of you probably haven't had a chance to look at: Know Your Fats by Mary Enig, phd.
She's a nutritionist/biochemist--internationally renowned....definitely not mainstream advice, but again, i think getting the best information means hunting down the best (not always most widely available/nor popular) resources. For those so inclined.....Nourishing Traditions by Sally Fallon is astounding information. Just don't expect to find these ideas 'backed' by the popular press or your run of the mill doc, because you just won't. One more treasure is endocrinologist, Dr. Schwarzbein. She will probably be a breath of fresh air for anyone interested in a more 'natural approach' to their diabetes but who can't/don't/won't/prefer not to go the Bernstein way. Personally, I am reading Bernstein's book at the moment and am fascinated/intrigued/excited by his approach....but then again, I'm not so 'put off' with his recommendations as many of you have stated. I DO understand what some don't like about his approach...mainly the limitations, but there's no way i could justify to myself, not looking deeper into the success of a guy who's lived with diabetes all these years without the complications that so many diabetics suffer, who follow the ADA's recommendations. A guy like that deserves my attention....so, back to his book. :)

have you tried salad dressings with just olive oil, balsamic vinegar, or other types of vinegar?? I found a great olive oil with thyme in it the other day. There are also some fabulous dressings in the some of the low carb books that I have, much nicer than the bought variety with all the additives that are no good for us long suffering diabetics!
I think that a salad consisting of the above dressing, with small amounts of feta cheese, olives, tomatoes, etc. is just what you need with your steak!

Extra virgin olive oil, Balsamic vinegar, and FRESH basil.
Ain't nothing better. (my favorite salad is that dressing, lil bit of fresh mozzarella, baby spinach, and cucumber. Sometimes i'll add a red pepper, carrots, olives, artichoke hearts or just whatever I have on hand.

When's lunch?
This topic just leads me to wonder..."If good fats aren't always good, then are bad fats always bad?"
