Since I'm 1.5 and on insulin, I don't really pay much attention to the "Low Carb" things because they generally mean low NET carbs---lol
low Net Carbs are fine for people trying to lose weight, I suppose, but carbs is carbs to someone with Diabetes.
Tried it a few years ago. Threw it out a few minutes later.
:)
Things don't bake up the same as real flour, and then when you read what is in it ...

LOL @ Pam! I tried the pancake mix and also the brownie mix. Not worth the money and both tasted horrible!

I see that they have a Low Carb "Bake Mix" (http://www.atkins.com/products/bake-mix). Sure it's out of stock and seems to be discontinued, but I did find a recipe so that you can make your own (http://homecooking.about.com/library/archive/blmisc72.htm and http://recipecircus.com/recipes/booper/LowCarb/Make_your_own_Atkins_Bake_Mix.html).
