Would anyone care to share fast, healthy recipes?

My favorite is:

1. Rice (my kids will eat it)
2. Spinach sauteed in garlic and extra virgin olive oil.
3. Salmon coated with marinade, put in a frying pan, cover and cook on low for 20 minutes. Yum!

Sounds great Lynne, I usually will not have rice because it causes me to spike. What kind of marinade do you use?

I use iron chef marinade. Not the lowest carb, but I don't use much and I dilute it with water.

Rice causes me to spike also, so I eat very little of it...leave most for my kids and hubby...and I eat most of the veggies. Works out well.

If I'm desprit (sp) I do meat spagetti on whole wheat pasta with cheese and side salads. I can whip that up in half an hour.

One of our favorites is
Chopped onion & mushrooms, sauteed in a little olive oil. Save in a dish and use the same oil to cook chicken breast slices or fish with a little white wine and fresh basil, salt and ground pepper. (Love the pureed basil that comes in a tube, too.) Cook the wine away until the meat browns. Return the onions and mushrooms to the top and finish cooking.

Serve over wild & brown rice with a good salad. I mostly skip the rice part, but I certainly don't skip sipping a little of the wine while I cook and later with dinner too. ;)

Wild rice is one of my least favorite things to have to skimp on because of my diabetes. I could eat a whole package of Uncle Ben's all by myself!

I like to buy a package of washed and cut lettuce and get a rotisserie chicked (preferable lemon pepper) I pull the chicken off the bone, and add whatever healthy additions I feel like that day. We like ranch dressing, and this is something everyone will eat.

i have made a good chunk of them but some take 20 some that 45mins

Put a boneless chicken breasts in the toaster oven for 20 minutes on 450. Remove, add a tbs or 2 of tomato sauce then sprinkle with Parmesan cheese and return to toaster oven for a few minutes.

While it finishes, nuke a small portion of frozen whole wheat pasta.

Serve Chicken Parmesan over pasta.

Ok, my quick cheap tasty fave; Kidney bean tacos

Drain a tin of kidney beans and put them in a fry pan (if non stick, no oil needed)

Add a few tablespoons of tomato salsa, and stir through until combined

Warm taco shells in oven

Grate cheese, shread lettuce, chop tomato.

Spoon kidney bean mixture into taco shells, top with cheese, lettuce and tomato!

Yum yum, low GI, moderately low fat, and very quick. Takes me about 10 - 15 minutes all up.

30 mins?? i take a pita put some tomato sauce on it, some cheese, put it in the oven for 15 mins and VOILA!!

a pizza with 10 g's of carbs =] still have to bolus a bit for it depending on my sugar levels. but its a healthy pizza,, not full of all that greese, and fat, and sodium

oops got the pita shelland fajita shell mixed up......but if you want less g's of carbs use a Wrap...or a fajita shell

Last night's meat (chicken or whatever... leftovers like)
on top of
Salad (with whatever fixin's you like)
toast a slice or two of bread (whole wheat or whatever you like)

now here's the secret, take 1 clove fresh garlic, peeled, and scrape it on the toast when it is hot out of the toaster.

And you thought garlic bread had to be greasy. (this is soooo good) you can add a little butter or margarine (or parmesian cheese) if you like, but it really doesn't need it.

If you're not doing a family meal, a good one is a spinach quesadilla. Or any type of quesadilla really.

For breakfast I like to have a fried egg sandwich.
- an egg
- english muffin
- condiments of your choice
- cheese

Fry the egg however you like it (I like over easy) then I toast the english muffins and spread fry sauce (ketchup and mayo) on them, and sandwich the grated cheese between the egg and the condiments. Yumm!

yea, i never check my spelling, i can only spot a mispelled word if someone else does it..

lasagne..my wife made egg crapes (didnt use any flour, just real paper thin eggs)..substituted them for all noodles in lasagne..excellent!!

gumbo, i used to shoot for 900 calories per cup in gumbo, but i now make diet gumbo, or at last i tried last night

stir fried veggies in olive oil/ fresh garlic (green peppers, green onions, celery)
with paparika, & a creole styled spice, such as emeril's

fried some polish suasage with the spices

would normaly used a ton of crushed tomatoes, used about a 1/3, replaced the other 2 3rds w/ water..made up for it with a load more spices

fried up about 1/4 pound of bacon, usually at this point i make a bacon rue (sp??)(thick, greasy, floury gravy), but just added the naked & semi drained bacon

boiled all the above in a pot, brought to a simmer, & threw in a bunch of chopped up fresh broccoli (pretending it was rice), & about as much frozen okra as i could handle

also, added a little cinnamon, since its supposed to be so good for you. the cinnamon actually brought out a unique flavor, & tended to mild out all the other spices

opps, forgot, had some diced & chopped cooked chicked breast meat left over from something i tossed in too, shrimp would have put it on the pinnacle, but didnt have any

it sure satasfied my urge, & since im not a nutrition expert, i just eat stuff & test, it passed the testing test
