I think you can get a test for insulin levels and/or c-peptide (I could be wrong?). My Grandma has recently been diagnosed with pre-diabetes, her fasting insulin level (not sure re: c-peptide) is high & her dr said she is insulin resistant.

Btw, she also gets hypos after eating high GI/high carb meals which I think is called reactive hypoglycemia.

Congratulations, you have reactive hypoglycemia.

Basically what happens is you eat carbs, and since you are insulin resistance your blood sugar goes up. Pancreas sees that your bs is going up and says, "Oh shoot, need to fix this," so it pumps out a ton of insulin. But you're resistant, so it doesn't work right away. "Oh man, this is bad" thinketh the pancreas. And it does what it does and makes more insulin. All of a sudden, you aren't THAT insulin resistance and *CRASH* goes your bs, bottoming out.

It makes perfect sense in your situation.

Solution?

Cut back on carbs, especially simple carbs. Eat 6x a day, complex carbs, fats, and proteins.
