Hiking Day Trip

So my club is having a day of hiking and we are suppose to pack a sack lunch. I was wondering what I should pack since the normal sandwich is out cause of carbs. Also what should I have for breakfast, with having exercise and the jist?

Any comments and suggestions.... Thanks in advance.

Nuts. Cheese. WATER, Raisins in case you go low with all that walking. Jerky. Protein bars that are low carb.

Raid a healthfood store! You will eat quite a bit, and did I mention water?

According to Joslin's Diabetes, 2005 ed., 5 - 30% of those diagnosed as Type 2 actually have LADA.

Well you might think I'm crazy but when I'm out on the trail I like what I call a Kimo sandwich (my friend Kimo introduced me to them).
I make them from a low carb pita bread, I think it says flaxseed, oatbran and whole wheat on the label but it has 8 grams of carbs 4 of which are fiber and it doesn't taste too bad. On that I spread peanut butter. I like the kind made from Peanuts and salt but even the processed stuff is around 7 grams of carb for two tablespoons.
Then I slice up some pepperjack cheese, no carbs at all.
and finally I top it with a half dozen slices of pepperoni. No carbs there either.
I just spread the peanut butter down the middle of the unopened pita lay on the cheese and pepproni then fold it in thirds.
Makes a pretty good meal with only 11 grams of carbs.

Thinking about that Kimo sandwich made me throw up in my mouth a little bit! It's just crazy enough that I have to try it now.

Hi, Tommy.

Interesting combo...I just had to try it, although I skipped the pita - just made them into little appetizer-like things with almost no carbs. Pretty good! I think my only complaint is that everything in the mixture tastes so strongly that the flavors almost cancel each other out. Maybe I need to play with the amounts a little more so that doesn't happen.

Hi!

Okay, you are cutting carbs and that is a good thing. However, there is a huge difference between cutting and eliminating carbs. The foods you want on a hike are things like nuts and hard cheeses (neither of which require refigeration) of course lots of water.

There are carbs in the nuts and cheese but they are complex carbs that are slower to digest and therefore don't cause rapic swings in BG levels.

Since your not on any diabetic medications it is not likely that you will have a hypo so packing fast acting carbs is not necessary.

Most importantly, enjoy the hike. Don't obsess over the Pre-D diagnosis -- just eat sensibly and have a good time.
