Pie Crust

Anyone have a good low carb pie crust recipe an idiot can make? I figured out how to make a great very low carb cheese cake filler but I miss the crust. I'm tired of eating it out of a bowl.

I've used this recipe many times. 25 gr of carbs - for the whole pie. Great with apple filling, berry filling, and kids love that crust when I make a cheesecake. I find this recipe useful when the filling doesn't have to cook for a long while.

Here it is:

Low carb pie crust -

1/2 cup of almonds
1/2 cup of pecans
1/2 cup of macadamia nuts
5 tablespoon of Splenda (I put less, it's a matter of taste)
1 teaspoon salt
1/2 cup of butter, melted
1 big egg, beaten

Put nuts in the food processor until they are powdery. Add the Splenda, salt, and melted butter. To finish, add the egg to the mixture and mix well.

Press this mixture in a 9 inch pie plate and bake at 350F for about 15 mins or until nice and brown. Let the crust cool down.

Fill with your fav pie filling.

Enjoy!

Marie............thanks for posting that recipe. I love the low carb cheesecake from the Cheesecake Factory and I believe their crust is made from nuts also.

Thank's MG. I just got around to checking the responses. Looks like I can handle that one.

At anyrate, I will post my filler recipe. Most of you cooks probably have it but I will provide it just in case.

1 pack of cream cheese
1 small carton of heavy whipping cream
5 packs of splenda
1 tsp vanilla
splash of real lemon

Mix with mixer until it gets thick.
Put it in MG's crust and smooth out.

Use your imagination for a topping or eat it like that.

I can feel my arteries clogging reading these recipes! I know nuts have the good fats, but all of that butter and cream and cheese - yikes! I make one of those fake cheesecakes using a mix of fat free and a little bit of regular. I've tried recipes using Jello and fat free cottage & cream cheeses. I love, love, love cheesecake but my brain won't let me have it (the real stuff) too often.

I do have to say that the mini lowfat cheesecakes I made recently were yummy. They were made with mostly FF cream cheese and a little of the real stuff, baked in a muffin tin with a vanilla wafer for the crust. Except I used lemon snaps instead of vanilla.

It's better to keep such deserts as a treat only, or for special occasions. But when a special occasion does come up you don't feel as bad when the desert is not so high in carbs. You don't feel left out. And people will not believe it's a 'diet' recipe...

For a healthier version, you can always fill it with fruits, berries, apples. A mix of them! Especially during summer, the variety is there. You only need to make up your mind
