This summer work hired a student to fill in for holidays etc. She was wonderful help and even had the ability to bake. She made lovely treats for work. Muffins, Cookies, etc.
I never succumbed to my brains desire to have any of the offered treats. (huge effort for me really!)
Before she left, she came to my desk and said, "I've made you something you can eat!"
She made this wonderful veggie pizza (she called it).
I don't know if you've heard of it. I don't know how many calories are in it.
I don't know how much fat etc. But i do know the sugar content would be next to nothing! So of course i had a piece...umm.. 2!
Here it is. I've since made this at home and tra la la my girls like it too!
Ingredients:
1 Pillsbury Dough Pizza Crust Cooked and yes cooled!
125 mls of low fat cream cheese
125 mls of low fat mayonaise
1 package of vegetable dressing mix (I used a Herb mixture)
Cream the above three ingredients until smooth.
Spread on the cooled pizza crust.
An assortment of your favourite vegetables can now be added to the top.
I used, 1/4 of a yellow pepper, 1/4 of a red pepper, 1/2 cup chopped finely celery, 1 green onion also chopped fine, 1/4 cup of carrots shredded, 1/4 cup of grape tomatoes halved.
Topped with roughly 1 cup of shredded light cheese.
When Christine made this for me she used broccoli. I think any vegetable would be suitable.
Cut into squares this recipe makes roughly 12 pieces.
By the way, just for an FYI, New Orleans Pizza uses a no sugar added sauce on their pizza's!
I hope you find this recipe enjoyable!
