Red Cabbage

I have a few red cabbage to pick. First time grower. No idea what to do with them. Anyone with an interesting recipe?

I usually just slice it, throw it in a pot with some chopped apple, a splash of vinegar, and a little sugar (to taste). Cook the whole mess over medium or medium low, stirring occasionally, until it falls apart and is tender. Season or sweeten as needed. This goes great with pork chops!
