I was gonna make this last year, but never did. I wasn't gonna decorate it tho! LOL Maybe you could incorporate some pumpkin into it somehow?? Or do a search over there at Kraft Foods - Great Recipes and Food Ideas they at least put the carb count for all their desserts
I have an O.M.G. TO DIE FOR, uber delicious recipe for pumpkin pie cake .... but it is SO not diabetic friendly! LOL It is REQUIRED by my whole family that I make this dessert for Thanksgiving and Christmas! LOL

| | Ok, now ya got me on the holiday dessert hunt! LOL I DID find some pumpkin cheesecake bars!! But you would need to substitute the sugarfree jello pudding for the regular to make it low carb. It's not outrageously high in the first place 20g carbs per serving. It looks delish ... I think I'm gonna try it this year!!!

| | My mom made pumpkin and sweet potato pies using Splenda last year ... taste was fine, but texture ... well it looked and wobbled like rubber and just didn't feel right in your mouth, yanno! I know neither me nor my BIL liked it! LOL Now I'm not sure if she used the baking Splenda or just plain ole. My mom's pies are usually to die for .... I couldn't break her heart tho, and told her yea, it tasted alright, but wasn't quite the same! LOL I didn't even finish a whole peice of it
If you give it a shot, lemme know the outcome, and what you did!! I do LOVE pumpkin and sweet potato (prefer sweet tater pies tho  )!
I like turkey, especially deep fried, and I can't make good gravy to save my life! LOL I apparently did NOT inherit that gene from my Mom!! ROFLMAO So I bake the Turkey (cuz I'm good at that! LOL) and she does the gravy!!

| | | That's so funny. We used to go to my Aunt's house for Thanksgiving and her mil made the worst sugar free pies. My Dad wasn't one to leave food on a plate but we'd each have one bite and just claim we were too full to eat it. Nothing wrong w/a little white lie!
Do you have a deep fryer for your turkey? Is that a stupid question? Deep Fried turkeys are good. |

Yes ma'am we sure do have a turkey deep fryer  Deep fried turkeys are the BESTESTEST! LOL Altho they do NOT replace stuffin cooked inside a turkey! I MUST have my stuffiin cooked INSIDE the turkey, so I always bake one too! 
I dont think we're doing the fried turkey thing this year as I'll be cooking at least a 20 pounder, plus we'll have ham too ... but well, ya just never know! LOL Extra meat is good for those days afterwards yanno!!

1 15oz can of pumpkin
3 tablespoons of cocoa
2-3 tablespoons of splenda
2-3 tablespoons of flaxseed meal
approx 1/2 cup whipping cream
1 teaspoon of vanilla
All of these amounts can be changed to suit your taste as to sweetness and chocolate.
Add everything except the cream together in a big bowl and mix good with a mixer. Start adding in the cream and mix until you get a pudding consistancy. I added a few tablespoons of (liquid) coffee straight from the pot for a little added flavor but that's optional.
When you are satisfied with the sweetness and texture, dump everything in a pastry bag or just a plastic bad with a corner cut off.
Squeeze out grape size nuggets on a piece of foil and freeze until solid. Makes a ton and they taste just like a chocolate fudgesicle. I make a bunch and keep em in a big bowl in the freezer and get a handful for a snack. |

Definitely way less than the real thing.  |
