Cream Cheese & Blueberry Omelete

Use the following filling in a two egg omelete:

Place two ounces of fresh blueberries in a small dish.
Put one ounce of cream cheese on top of the berries.
(If cream cheese is on bottom it sticks to the dish.)
Heat the cream cheese and berries in a microwave for about 30 seconds.
(Time required in microwave will vary per Wattage.)
Spread heated cream cheese and berries on omelete.
Sprinkle one teaspoon of cinnamon on filling and fold omelete over.

Variations:
Use frozen blueberries only if you must.
Use raspberries instead of blueberries.
Use blackberries instead of blueberries.
Add an ounce of pecan or walnut pieces to the filling.
Add half an ounce of sliced kumquats to the filling.

Why mess with making the omlet, just go straight to the blini, or blintz, if you prefer.................I know I do when the Opportunity arises.
