Pancakes

Does anybody have a good recipe for sugar free pancakes? I never eat pancakes. Fact, I haven't had them in over what...five years? Maybe more? But for some reason, I am craving them like mad I already got the sugar free syrup and some flour. Just trying to find recipes for sugar free pancakes or a splenda substitute recipe.

I use Carbquik Baking Mix to make low carb biscuits, pancakes, and other things. There are some recipes, including pancakes, here.

Splenda has lots of recipes on their website - they'll probably have one for pancakes!

In searching I'm finding similar recipes as follow

Low Carb Pancakes

Ingredients:

1/2 cup of ground flax seed meal
1/4 teaspoon baking powder
2 eggs
2 tablespoon oil or melted butter
3 heaping tablespoons of cottage cheese
1/4 cup of cream
Mix all ingredients together. You may need to add a little water to thin. Fry as you would regular pancakes.


13 carbs total in the batch above but I don't know how many pancakes you get out of it.

I use a regular recipe, but I substitute 100% whole wheat flour for white flour and cut the amount of sugar down. The extra fiber really helps keep my BGs from going bonkers.

I was never a big pancake/waffle/french toast fan...could take it or leave it. Now, however, since I CAN'T have them...i've been wanting them....Odd...I wish it would work that way with broccolli, spinach, asparagus, brussel sprouts and liver!

HCTZ 12.5 mg every other day for BP
Enalapril 20 mg 1 daily (ace-inhibitor)
Lower carb dieter (approx. 75 total carbs/day, more on weekends), taking chromium, multivitamin and fish oil tablets


Initial A1C 8/06: 9.6
11/06: 6.2.
03/07: 5.3
06/07: 5.4
10/07: 5.3
05/08: 6.2 (after dealing with shingles & bronchiti)
2/09: 5.5

Esquire had a good article about "healthy" pancakes this month. I have made them twice and am surprised by how good they are, tasting and health wise.

1/3 cup whole-wheat pastry flour
1/3 cup oat flour (I used dry oatmeal)
1/3 cup unbleached flour
2 tsp baking powder
1/4 tsp sea salt
1 cup vanilla soy milk
3 egg whites or 1/4 cup egg substitute
1 tsp vanilla extract
1 tsp orange zest
1 tsp unsweetened apple sauce
2 bananas
1 cup blueberries

Mix dry and liquid separate then combine. Put bananas and blueberries in batter once on griddle. Enjoy!
