Peanut Butter Pie

2 3/4 pints sugar-free ice cream,softened slightly
1/2 c peanut butter
2 ozs semi-sweet chocolate chips
1 graham cracker pie crust
sugar-free chocolate sauce*
sweetened whipped cream*

By hand, stir together ice cream, peanut butter and semi-sweet chocolate chips. Spoon into graham cracker crust. Freeze immediately until solid, about 2 hours or overnight. Serve with chocolate sauce and whipped cream. Garnish with peanuts.

So what is "diabetic" about this recipe? The first four ingredients alone make each serving (1/8 pie) weigh in at over 40 carbs.

I used Healthy Choice vanilla lowfat, no sugar added ice cream. But thanks for pointing this out, as my readers might also think this pie would be high in fat. I'll add a note to the bottom of the recipe.

Can you describe the taste? It sounds awful rich. Compare to a peanut butter cup?

also,PLEASE DO NOT CALL IT SUGAR FREE ICE CREAM!!! when I was new to this site, somebody said "sugar free" ice cream, and I searched over a week for something that DOESNT exist!
its called NO SUGAR ADDED....HUGE DIFFERENCE..The ice cream STILL contains sugar,carbs,fat,,etc...

Okay guys, I'm taking everything you're saying to heart. In fact, this is helping me because I am new at blogging and I want to give my readers factual information that will help them make informed decisions that will not jeopardize their health. I also want to give recipes that taste good.

Most diabetics will go out to a restaurant and order a dessert every now and then, or prepare a dessert at home and tell themselves its okay to do this occasionally. These desserts are typically loaded with sugar, fat and carbs. I am trying to give recipes that reduce the impact on a diabetic's health but still taste good. I am not trying to totally eliminate carbs as most of these types of recipes give the finished product a cardboard taste. I don't advocate eating desserts everyday but I know that most diabetics do eat sugar. I took a poll on several diabetic websites before I started my blog.

Not every recipe I feature has less than X amount of carbs, sugar, fat etc. but they all contain less than the traditionally made recipe and oftentimes I've slashed these harmful effects by half or more while still retaining the original taste.

Eventually I will add a carb counter to my blog.

Regarding the peanut butter pie recipe. Before I was diagnosed with diabetes, I used to occasionally order a slice of this pie in restaurants. I loved the pie but yes, it was very rich and loaded with sugar. Recently I had a taste for this pie, but wouldn't dare order it in a restaurant. I decided to make my own version that was much lighter and contained much less sugar. I studied other recipes such of this one before making my version:

Woody and Eddy's Peanut Butter Pie

1 c crunchy peanut butter
1 c sugar
1 8-oz package cream cheese
1 tsp vanilla
1 8-oz package frozen whipped topping, thawed
chocolate graham cracker crumb crust
shaved chocolate
peanuts

Graham cracker Crust

2 c graham cracker crumbs
1/4 c melted butter
2-ozs grated bar chocolate

I feel I did a good job in lightening this pie. The pie is a rich tasting pie, but not nearly as rich as the versions served in restaurants. It doesn't remind me of a peanut butter cup, as the peanut butter is not heavy and overpowering.

I will also correct the term "sugar free ice cream" on my site as yes, this can be misleading.

Thanks for your feedback, I do appreciate it, as it keeps me on my toes and will enable me to do a better job for my readers.
