zucchini ricotta frittata

I haven't tried it yet - but it looks really good.

Simply Recipes: Zucchini Ricotta Frittata Recipe

Carbs
3.8 g ricotta
10.8 g zucchini
1.3 g parmesan cheese

15.9 carbs total

7.95 (2 servings)

I ran out of people, friends, strangers to dump my zucchini on. I think I'll have to try this recipe. Looks good.

Ouuu you grow your own!?!?!

I just started tomatoes this year (the irony) and I'm getting a second growth - I have a black thumb so to have a plant actually live is a feat in itself.

Mmmmmmmmmmmm fresh fruit and veggies.

When I saw the name of this thread I thought ... hmmmmm now say that 10 times fast! LOL

That does look good! I'm the only one in my house who likes zucchini, so needless to say, I don't eat it often.
