| | | Any hot and spicy recipes? I was just diagnosed last week and I'm now trying to sift through my recipes to find ones that are low carb (and low fat as trying to lose weight too). I love hot and spicy food does anyone have any good recipes?
I can offer one which according to recipe, per serving is:
Protein 39g, Carb 8g, Fat 28g, Fibre 4g, Sodium 0.4g
I guess that using less cheese or low fat cheese and leaving out the walnut (I don't normally include the walnuts as I don't like them) will reduce Fat.
1 Beefsteak tomato
4 Chicken breasts (trimmed)
2 cloves garlic (I use 4)
2 Onions
2 Green chillies
1 Red pepper
1 Green pepper (I normal add a yellow one also)
2 Tablespoons vegetable oil
Pinch of salt (I have added this in months and don't notice any difference)
1/4 Teaspoon cayenne pepper
1/2 pint (300ml) chicken stock
1 Teaspoon chilli sauce (I know I add more than that)
1-2 Tablespoons white wine vinegar
3oz/75g Cheddar cheese
1. Peel the tomato, cut a cross in top and then place in bowl of water for 30 seconds, skin comes off easily. Chop it roughly, nice big pieces.
2. Peel & chop onions & garlic. De-seed chilli's then blend in food processor (with walnut), until you have a nice purée.
3. De-seed peppers and cut into thin strips. Heat oil in pan and fry chicken breasts for 5 minutes on each side (until golden brown) remove chicken from pan and season it with half cayenne.
4. Add peppers, onion purée to pan (or wok), add stock and bring to boil. Add chilli sauce, vinegar (salt if you want) and remaining cayenne. Place chicken on top and reduce heat, simmer for about 20 minutes (until chicken is cooked). Grate cheese and sprinkle over chicken, remove pan/wok from heat and allow cheese to melt.
I used to serve this with white rice and tortilla chips, but may change that now. I have been making this for a few years and at this stage I don't measure things any more as I generally like to add extra garlic and chilli sauce (or chilli's).
What do people think is this a low fat/carb friendly dish?

| | | Here are two recipes for you:
Hot And Spicy Cabbage (Low Carb) Recipe
1/2 medium cabbage
1 tablespoon soy sauce
1 teaspoon Oriental Five Spice Powder
1/2 teaspoon red pepper flakes
1/4 teaspoon black pepper
If starting with a whole cabbage, slice from top of leaves down to core. Wrap other half for later and put in fridge. Lay remaining half on cut side and slice from "side to side" so that you have short strips. Place in a small pot and fill it half way up with water. Add remaining ingredients and simmer uncovered on medium to high until cabbage cooks down and is tender but not mushy. Stir while cooking to insure that cabbage cooks evenly. Serve hot with any white meat such as pork or chicken for an added "flavor boost". If you like spicy, this is a great low carb veggie that beats the "normal" side dish.

Spicy Oriental Shrimp Salad
Yield: Makes 4 servings
Ingredients:
1 head iceberg lettuce
1/2 cup fresh basil leaves
1/4 cup rice wine vinegar
1 piece fresh ginger (2 inches), peeled
1 tablespoon reduced-sodium soy sauce
3 cloves garlic
2 teaspoons dark sesame oil
1 teaspoon red pepper flakes
28 large shrimp, peeled and deveined
1 to 2 limes, cut into wedges (optional)
Vinaigrette Dressing (recipe follows)
Preparation:
1. Core, rinse and thoroughly drain lettuce. Refrigerate in airtight container to crisp. Combine basil, vinegar, ginger, soy sauce, garlic, sesame oil and red pepper in blender or food processor fitted with metal blade. Blend to form rough paste, using on/off pulsing action, scraping sides as needed. Transfer paste to large mixing bowl. Add shrimp;stir until coated. Cover and refrigerate 2 hours or overnight.
2. Preheat broiler. Broil shrimp in shallow pan 2 minutes per side, turning once, just until opaque. Shred lettuce; arrange on four plates. Top with cooked shrimp. Garnish with lime, if desired. Serve with Vinaigrette Dressing.
Vinaigrette Dressing: Whisk 3 tablespoons red wine vinegar with 1-1/2 tablespoons olive oil in small bowl until blended.
