Winter Wonder Bars

This is from my local diabetes newsletter. I haven't made it, so I can't vouch for its tastiness, but it looks interesting....


Winter Wonder Bars

Looking for something to satisfy your sweet tooth without packing on the pounds? This snack is full of whole-grain goodness and the apple, orange peel, dates and nuts all contribute a wealth of phytochemicals that bolster your health. Just a touch of honey adds a depth of flavor that will help you steer clear of those tempting high-fat, high-calorie holiday cookies!

canola oil spray
¾ cup whole wheat flour
¼ tsp baking powder
¼ tsp baking soda
1/8 tsp salt
1 large egg
¼ cup honey
2 Tbsp canola oil
¼ - ½ tsp grated orange peel
3 Tbsp applesauce
2/3 cup pitted and chopped dates
1/3 cup chopped walnuts

Preheat oven to 350 degrees.
Lightly spray an 8 inch baking pan with the canola oil spray and set aside. In a large bowl, mix the flour, baking powder, baking soda and salt. In a small bowl, mix the egg, honey, canola oil, orange peel and applesauce. Stir the egg mixture into the dry ingredients until blended. Stir in the dates and walnuts. Spread the mixture into the prepared pan. Bake ~ 25 minutes until an inserted toothpick comes out clean.

Makes 16 Servings.

91 Calories
4 g Fat
14 g Carb
58 mg Sodium
2 g Protein
1 g Dietary Fibre

This sounds yummy! I'd probably throw a little cinnamon in as well...i'll bet it would make your house smell great while its cooking. Thanks for sharing!

Sounds good Belyro, thanx! I think my A1C will be going up - I've been eating horribly lately! Using lots of insulin and eating more fattening (delicious) food lately I made some oh-so-creamy rice pudding last night (yes, I did say rice,....the evil WHITE kind!) Tonight I made a creamy multi-pudding and whip cream layered dessert with a graham cracker crumb crust. Mmmmm, I have to admit I had seconds! I need some healthy Winter Wonder Bars!!!!!

ever read something and read it wrong-switch the letters around?! i saw this thread and read"winter wonder bras"! and then i was thinking"what-are they fur lined?!" the BARS sound yummy-except i wouldn't put in dates-icky things-dried fruits! trish
