Mexican!

Does anybody have healthy Mexican recipes? I know there's not a wealth of healthy (and tasty) Mexican restaurant food so I was hoping somebody could chip in a recipe. The family is doing Christmas Mexican-style and we don't need everyone's glucose spiking during Dirty Santa (half the family is diabetic). Ha.

Thanks in advance.

Here are two:

Mexican Omelet

INGREDIENTS:

* 2 eggs, beaten
* 2 tablespoons crema or sour cream
* pinch of salt
* pinch of cumin
* pinch of garlic powder
* 1/4 cup shredded jack cheese
* 1/8 cup fresh salsa, drained of juices
* 1 teaspoon lard or oil

PREPARATION:
Beat eggs, crema, salt, cumin and garlic powder together.
Heat oil or lard in a medium round frying pan over medium heat. Pour in egg mixture and turn heat to lowest setting. Let egg cook until almost set.

Place cheese and salsa on half of the omelet. Fold top over to help melt the cheese. Cover with a lid or a piece of foil for about 3 minutes to finish melting cheese. Remove from pan and serve immediately.

*Slide out of pan onto plate and then place pan upside down on top of plate. Turn pan and plate over so omelet falls back into pan to cook the other side.

Shrimp Ceviche

INGREDIENTS:

* 3 lbs small raw shrimp, cleaned
* 4 large tomatoes, seeded and diced
* 6 limes, juiced
* 4 lemons, juiced
* 1 cup cilantro leaves, chopped
* 1 serrano chile, seeded and finely chopped
* 1/2 of a cucumber, peeled and diced
* 1 red onion, diced
* salt and pepper to taste
* 3 tablespoons tomato sauce

PREPARATION:
Lay out shrimp in the bottom of glass baking dish. Pour lemon and lime juice over them and refrigerate for 3 hours. The juice will "cook" the shrimp. Toss with remaining ingredients and refrigerate for one more hour or longer.

You can always make fajitas using low carb tortillias...we do this a lot at home. I marinate the chicken/steak/shrimp, cook, add black beans, salsa, lettuce, cheese, tomatoes and onions.

Also, you can make your own tortilla chips by baking the low-carb tortillas.

Personally, I tolerate refried beans quite well, you could make a bean burrito on the low carb tortillas.

Carnitas would be blood sugar friendly as well. You should avoid the rice and the regular chips, but there are plenty of things you can have in their place.

Hi,

I posted a recipe for a spicy chicken dish, in Ireland it's called "Mexican Style" chicken, it might be something you would like, here's the thread:

Any hot and spicy recipes?
