| Turkey Bites Found this on the Diabetes Federation Of Ireland's site. It's simple but I like the idea.
Spicy turkey bites
575 g turkey mince/minced leftovers
1 medium onion, finely chopped
1 tbsp oil, vegetable
1 tsp cumin, ground
1 tsp cinnamon
1 tbsp lemon juice
In a bowl, mix together the turkey, onion, spices and lemon juice and add a little salt and pepper. From the mixture, make up oval shaped bites and flatten slightly. Heat the oil in a pan and fry the bites on both sides until well done. Serve with hot pitta bread filled with some lettuce and cucumber and a little natural yoghurt. For a change: Use lean lamb or pork mince. Flavour with a teaspoon of mild curry powder. Serve with boiled rice and some green beans or peas.
