Breakfast Omelette

Hello all. I was experimenting this morning with some foods, and came up with a pretty good recipe for an omelette. This could easily be made into a frittata.

Ingredients:

3 eggs
3/4 cup frozen chopped broccoli
1/4 cup low-fat cottage cheese
1/4 tsp black pepper (optional)
1 dash salt
1 dash onion powder
1 Tbls butter or margarine
1 Tbls Olive or Sunflower oil


In frying pan over medium heat, warm broccoli in the Olive or Sunflower oil until warmed to the center. When done, drain the oil. Set back on burner and add the butter or margarine.

In mixing bowl, beat eggs until slightly whipped and add the cottage cheese, pepper, salt and onion powder.

Mix egg mixture into frying pan, and allow to sit for 2 minutes. Stir vigorously until eggs reach desired doneness.

Serves 2 - 3.

Ah eggs! Can a food be any better. The recipe sounds good. I will certainly give it a try.
