| | | Low Carb Chocolate cake 1-2 servings Low Carb Choco Cake
1/4 c. finally ground almonds
1 T. unsweetened cocoa
1/4 t. baking powder
5 pkts Splenda or an equivalent amount of stevia
2 T. melted butter
1 egg
Mix all the above, pour into a microwave safe cereal bowl. Cover with plastic wrap and micro 45 seconds to one and 1/2 minutes. My microwave only takes about 50 seconds. Top with unsweetened whipped cream

I listed this as 1-2 servings, I cant eat the whole thing but my hubby can. 1/4 c. almond meal is 160 calories, 6 carbs 3 fiber. 1T. cocoa is 12 cals, 2.5 carbs and almost 2 fiber.

Mark | I have a dandy little gadget called The Magic Bullet and I use whole blanched (raw) almonds and make my own almond meal. You can buy Almond 'flour' at the health food store but Ive always heard the oils go rancid pretty quick so its not fresh if bought that way.

I bought the blanched, slivered almonds in the bulk department at Central Market (kind of like Whole Foods). I was afraid they might be a little raw so I roasted them for a few minutes in the oven and then let them cool before grinding.
What is the Magic Bullet? I used a little food processor to grind mine up.

Mark, its a wonderful way to #1 have something sweet and chocolate #2 with the almonds youre getting gobs of Vitamin E & healthy fat! Alice, coffee grinders are wonderful things to have too!

Here in the U.S. the "servings" are shown on most food packages along with how many carbs, protein etc . You might have to experiment a little? Hope this helps?
