Low Carb Snack

If you need a low carb snack try celery stuffed with peanut butter, or cream cheese. You can get creative and use different kinds of cream cheese, garlic etc.

It is amazing how this hits the spot and fills you up.

yeah - it is one of my favorites! i also sometimes substitute that ham paste in a jar stuff (Pecks brand in Australia) for the peanut butter and sprinkle with a dash of chili sauce.

I'm sorry, but any snack recipe that contains the word "celery" is the work of satan!! That stuff is baaaadd!!

Bad? What could be BAD about celery? Do you mean you don't like it?

A1c 7 fall 2007. 50 yr old. 3 diabetic pregnancies w/ insulin 10,12,14 yrs ago. Thankfully reverted back to 'non-diabetic' after all 3. Re-diagnosed 2007. Fighting high fasting BS currently( dawn phenomenon), 2000 mg Metformin (1000 mg 2x day) Mother to 9 boys and 5 girls. Grandmomma to 4 with a 5th on the way.

I guess I should have put a smiley. I have never been able to stand the stuff. Wish I liked it, cause it woud be one more low carb thing to eat.

Yes thats a great idea, that was always a childhood favorite of my Grandparents at thanksgiving and christmas dinners that little extra tray of stuffed celery.. I will return to those days, thanks for the reminder.

I love celery but did not realize it was so good for you. Maybe I can get the family to eat more of it.
