Chocolate Clusters

My mom found this in the local newspaper and its really good, it is somewhat similar to the fudge recipe thats up here also.

Chocolate Clusters (16 clusters)

l ounce unsweetened baking chocolate, coarsely chopped.
2 Tablespoons Butter (used smart balance)
1/3 cup smooth natural peanut butter, unsweetened. (used smart balance)
1/3 cup ricotta cheese
artificial sweetener to equal 6 teaspoons sugar or to taste.(used 8 tea. splenda)
1 Tablespoon vanilla


Combine chocolate & butter in a glass bowl, microwave on high till melted, stirring every 30 seconds or so. Add peanut butter and ricotta. Stir till smooth, then drop by the rounded teaspoons onto waxed paper, chill untill firm. Store in Refrigerator.

5 g fat
5mg cholesterol
2 g proten
2 g carbohydrate
1 g sugar (splenda)
1 g fiber
27 mg. sodium
16 mg calcium
23 g potassium

Larry, thanks for sharing...these sound yummy!!!...I might even "kick it up a notch" as Emeril would say and add some chopped nuts for more texture. Gonna make these for the weekend!

My wife made these last night..AWESOME!!!!!!! Thank you so much for the recipe. The really neat thing was the Peanut Butter, I LOVED it, and cant believe how good it is for a Diabetic.

Thanks for the feedback Brian. Yes I was very pleased that they actually seemed like you were eating something you enjoyed without much guilt attached.. I need that..
