Banana (or Vanilla) Nut Muffins

I just made these last night and they are SOOOOO good! They're super moist and delicious! My hubby thought they were great too!


Banana Nut Muffins
Serves: 6
Carbohydrates Per Serving: 3.5
Preparation Time: 10 minutes
Difficulty: Easy

Ingredients:

1/2 C Ground flax seed
1/4 C of Atkins Baking mix or Baking Mix Substitute
2 T Oil or melted butter
1/3 C of Splenda
1 egg, beaten
1 t baking powder
1 1/2 t banana extract (or vanilla, hazlenut or almond) - I used vanilla
1/2 C water
1/2 C finely chopped walnuts or almonds - I used walnuts

Cooking Instructions:
Mix all ingredients by hand.
Spray muffin pan (or line with papers), spoon batter into muffin tin.
Bake 25-30 minutes at 350 degrees

Just took a batch out of the oven. These are excellent, very moist.

Did you use banana extract? That's what I'm going to do next time instead of vanilla.

I buy packaged low carb muffins and these were 100 times better, very moist, tasty and lower carbs than the mix.

Do you have a good bread recipe?

Pm me if you do not want to list it, the bread I am buying now has 4 carbs per slice and is good for toast but not the greatest for a sandwich.

I need something to make in the bread machine if possible.

These muffins are awesome.

Could you not add lemon extract instead of banana or strawberry extract for different flavors of muffins.

I posted a good breadmaker bread recipe in the recipes forum a while ago. Let me know if you can't find it and I'll send it to you. It's a bit heavy, though. Not bad, but a bit. I'm trying a new one today. I'll let you know if it turns out well.

I'm sure you could add all kinds of types of extracts! If you were willing to add a few more carbs you could probably toss some dried fruit in there too.

Thank you Bethany! I've been eating Val's Apple Flax muffins like crazy . . . I'll try these next for a change. Ground flax is fabulous isn't it?!

I Made them sunday and Doubled the amount of everything to make 12 i have one everyday they are the best .Any oatmeal cookie recipes?
