Apple Flax Muffins

These are very moist and flavorful muffins.

1 1/4 cup flax seed meal
2 tsp baking powder
1 T cinnamon
1 tsp nutmeg
1/2 tsp salt
3/4 cup Splenda
4 large eggs(I used egg beaters)
1/4 cup oil
1/2 cup liquid(flavored syrup or water)
1 T vanilla
1 medium apple, chopped fairly fine
1/2 cup chopped pecans(optional)

Preheat oven to to 350F. Grease a 12 muffin tin very well.

1. Mix the dry ingredients together, then add the rest of them.

2. Let batter stand 10 minutes, then put into the muffin pan and bake for apprx 18 minutes, until toothpick comes out clean and muffins just barely start to pull away from the sides.

Nutritional Information-per muffin, based on using egg beaters.

Calories from fat 78
Total Fat 9g
Saturated fat 1g
Cholesterol 0
Sodium 192mg
Total Carbohydrates 3 gr

Val these sound great! When you mention 1/2 cup of liquid/syrups, are you speaking of the "Davinci" type s/f syrups? If so, i'll bet the cinnamon or hazelnut would be great!

I'm going to give these a try...i'm a bit bored with my usual b/fast!

Yes you can use the "Davinci" type s/f syrups. I used just water and put a little extra cinnamon and nutmeg. They're very flavorful.

Davinci makes a cinnamon flavored syrup? I haven't seen this one on the supermarket shelves.

I ordered it from their website, as I haven't seen them in our local supermarkets. Torani also has some good s/f syrups as well. We have a "World Mkt" in town that carries these.

Thank you!! I'm going to make some RIGHT NOW! I actually have all the ingredients (I'll use water instead of syrup). I'll let you know how mine turn out.

Val,

These are delicious! They came out absolutely perfect and I've only eaten one so far (good for me). I put a little cream cheese on some of it (I've gone crazy over whipped cream cheese lately). I put ground flax on my spinach salads all the time and love the nutty flavor. This is the first time I have cooked with it. The only thing I did differently was used 12 spenda packets because I don't have any other splenda . . . and I cooked a total of 23 minutes.

I doubled the recipe, put it in a bundt pan, and made a delicious birthday cake for my recently diagnosed diabetic brother. It was a huge hit with everyone at the party!

I just made these. They're really good! I think next time I might omit the nutmeg, though. I kinda just like nutmeg in pumpkin pie, I think.

My only problem was that they really stuck to the muffin pan, even though I used a LOT of Pam. Do they work with muffin papers, or do they stick too much?

I really liked these and will definitely make them again! The only change I made was to substitute unsweetened applesauce for the oil, but they turned out fine. Best part- no boluses needed

I haven't tried them with muffin papers. I used a non stick muffin tin and Pam. They didn't stick.

Mine was non-stick too, and I used a ton of Pam. Hmm....I wonder what I did differently.
