Cinnamon Cranberry Flax Muffins

1 cup Craisins
1 1/4 cup flax seed meal
1 tsp baking powder
3 Tbsp cinnamon
1 tsp nutmeg
1/2 tsp salt
4 egg beaters
1/4 cup oil
1/2 cup honey
1 Tbsp vanilla
2 Tbsp grated orange peel
1/3 cup chopped walnuts or pecans(optional for topping)

Preheat oven to 350F

Liberally butter muffin tins(I use Pam). Makes anywhere from 12 to 24 muffins(I get 18)DO NOT use muffin liners-they will stick.

1. Mix dry ingredients and wet ingredients(minus the craisins)seperately, then mix them together.

2. Let mixture stand for 10 minutes to thicken.

3. Fold in craisins.

4. Fill each muffin cup about half way and sprinkle with nuts.

5. Bake about 15 minutes or until a toothpick inserted in the center comes out clean.

These are very good.

These sound great! I love craisins and walnuts, too. They must have alot of fiber because of the flax meal.

These sound great! Sounds like a muffin that won't spike like Mt. Everest!
