Barley Rice and Lentil dish

I'll invent a good name for it later...

1 qt low sodium veg broth
3/4 cup purple barley
3/4 cup brown basmati rice
3/4 cup green lentils
3/4 cup red lentils
1 clove fresh garlic minced
1 red bell pepper diced
1/2 tsp. No-Salt, salt substitute
1 Tbsp McCormick garlic pepper
1 tsp fresh cracked black pepper
2 Tbsp extra virgin olive oil

This dish is pretty darn good, and extremely healthful. I created this just to use up assorted ingredients that I had sitting around. The trick to it is that the barley rice and lentils all have different cooking times. So I add them so they all finish at the same time.

In a 3-4 quart pot with lid, bring veg stock to a boil and add purple barley. Reduce heat to medium, cover and cook for 15 minutes stirring occasionally. Throughout add water or more veg stock as needed to boil ingredients. Add brown rice, stir, cover, cook another 15 minutes stirring occasionally. Add garlic and green lentils stir, cover, cook another 10 minutes stirring occasionally. Make sure to maintain a minimum of liquid so that the next step cooks all the liquid off. Add red lentils, diced bell pepper, garlic pepper and black pepper stir, cover, cook another 10 minutes stirring occasionally. Reduce heat to low or off, stir, finish cooking. After it cools off a bit, stir in the olive oil.

this sounds delicious!

but, i suspect it has far too many carbs for me. any idea how many?

Rice is a no no for me. I haven't tried lentils yet.
No offence but I wouldn't go near that dish.
But then, we are all unique
