| | | Ice Cream Sandwiches I like to sandwich softened "no sugar added" vanilla ice cream between two graham crackers and freeze. I keep a supply of these in the freezer.

You can also do this with Cool-Whip..an old Weight-Watcher's trick! Even the regular Cool-Whip has very little carbs...and now is in chocolate or strawberry too.
Something else i've done that's quite good is take the frozen Cool-Whip and scoop out "balls" using an ice-cream scoop put in hot water. I roll these balls in chopped pecans, crumbled s/f cookie crumbs, coconut, almonds or peanuts, then freeze solid and put in a freezer back to eat one at a time when the mood hits.
