Ice Cream Sandwiches

I like to sandwich softened "no sugar added" vanilla ice cream between two graham crackers and freeze. I keep a supply of these in the freezer.

Thanks for sharing your idea Stacy!

You can also do this with Cool-Whip..an old Weight-Watcher's trick! Even the regular Cool-Whip has very little carbs...and now is in chocolate or strawberry too.

Something else i've done that's quite good is take the frozen Cool-Whip and scoop out "balls" using an ice-cream scoop put in hot water. I roll these balls in chopped pecans, crumbled s/f cookie crumbs, coconut, almonds or peanuts, then freeze solid and put in a freezer back to eat one at a time when the mood hits.

Princess Linda, I've also used the Cool Whip in place of ice cream, but have never heard about the Cool Whip balls idea! I'll have to try this! Thanks.

What a great idea Linda. Frozen Cool-Whip is the best. But with coconut and pecans? Good grief girl, market this!
