| One of my favorite meals is about 26 grams carbs total (including strawberries as a side):
1/2 of one whole grain pita loaf (if they are out I'll use the white ones) 16g carbs
2T jarred pesto sauce by Bertoli 2 g carbs
1 piece of roasted red pepper 2 g carbs sliced
1/4 cup raw spinach (wilted is fine) less than 1 g carbs
2 oz grilled chicken (leftover is fine) thinly sliced
1 oz provolone cheese
1/2 oz shredded cheddar cheese
heat oven to 400. Split pita into two sections and spread with pesto. Sprinkle with half the shredded cheese. Add spinach, then chicken, then pepper then the remainder of the shredded cheese and the provolone. Pop into the oven (on a cookie sheet) until the cheese is melted and the pita is beginning to crisp. I guess about 10 minutes. I usually eat this with strawberries on the side. It is awesome with artichoke and olives baked in too. |
