Have Dinner with BR on the Tiki Deck!

Welcome to the Tiki Deck, tonight we are having a great meal that includes Bonelss Rib Eyes, Bacon Wrapped Scallops, Shrimp, Sweet Corn, Stuffed Cajun Peppers, Asparagus and Mango/Pineapple Margaritas! Pull up a bar stool and stay a while. Hope you enjoy as we have some Trop-Rock Music on the tunes, and more drinks in the cooler...

Get all the food layed out!

6 fresh jalapenos or Banana Peppers (Not hot)

1 (8 ounce) block cream cheese, softened add 2 table spoons cajun seasoning, some very fine diced crab! Or try any of the flavored cream cheeses such as salmon or onion. I just like mine HOT!

6 slices thin pepper bacon, sliced in halfSlice each pepper in half lengthwise.


Remove stem. Carefully clean out all the seeds and white membranes.

Use plastic gloves and clean peppers under cold running water. Dry with paper towels.Spoon cream cheese in each pepper half.


Wrap a piece of the raw bacon around each piece of pepper and secure with a wooden pick. Grill over hot coals until the bacon crisps.

That sounds really great, will have to try it. A bit of Cajun cooking in Ireland!

Sounds too good, not to try!

Gently pull back the husk exposing the corn. Do not remove the husk. Remove the corn silk and use a brush to make sure all the silk is removed. Soak the corn with the silks removed in water for 30 minutes. This will prevent the husks from charring.
Preheat a grill to medium heat.

Remove from the water and pat dry. Season with cajun seasoning, Take a strip of pepper bacon and wrap it around the corn. Fold the corn leaves back over, covering the bacon and corn. Tie the leaves with butcher string and repeat the process for each ear of corn. Place the ears of corn on the hot grill and cook, turning occasionally until bacon is cooked and corn is tender, approximately 15 to 20 minutes.





Grilled Corn on the Cob Dipping Sauce

1/4 cup butter
1/4 cup maple syrup
3 cloves garlic, pressed or minced
1/2 to 1 tsp. salt (to taste)
2 tablespoon chipolte sauce

Heat grill to medium heat.
In a small sauce pan, combine all ingredients and simmer over low heat until bubbly and hot. Remove from heat and set aside. You’ll need to use real maple syrup for this recipe

Well there were a few leftovers, have to eat this week for lunch. This weekend It's Ribs, Pulled Pork and all the sides at BR's Tiki Deck... Plus I have to cook for 2 graduation parties..

I so miss pulled pork from the roadside stands with hot sauce and slaw mmmmmm

I used to live in N. Carolina for a couple of years.
