salad recipes

I am looking for some nice salad recipes. Please share . I keep making the same old ones and I would like to try something different for a change. Hubby would like that too.

I like to take a bag of spinach, add red onion, toasted pecans and fresh strawberries...great with balsamic vinaigarette dressing.


I also make one that everyone in the family likes (except me, as I don't like broccolli) that is:

1 bunch of broccolli , chopped into bite sized pieces, 1 chopped onion, 10 slices of bacon, cubed sharp cheddar cheese, with a dressing that consists of 3 tbsp red wine vinegar, 1 cup mayo and 2 tbsp splenda. Mix dressing and pour over salad, mix well and refrigerate x 2 hrs. You can also add raisins or sunflower seeds and almonds to this.

For this salad, you have to like curry. I loooove curry, myself. However, here 'tis.

Drain one can of white meat chunk chicken (or cook your own chicken breast and shred it). Place meat into a bowl.

Add 2 Tablespoons plain yogurt and 1 teaspoon mayo and mix into the chicken.

Add 1 teaspoon curry powder (or to your taste) and mix

Add a few dashes hot sauce, again to your taste

Add 1/4 green apple, chopped; halved grapes; manadrin orange slices or other fruit of your choice.

Mix thoroughly and allow to sit in the refrigerator for at least an hour.

Eat with lettuce, other raw veggies, or wrap in a low-carb tortilla. Enjoy!

If you want a little protein, try this.
Drizzle balsamic vinaigrette over halved grape tomatoes and chunks of good mozzarella cheese. Let sit for about 20 minutes. Serve with a few croutons or a good lettuce mix, or alone.

I like taco salad. I brown ground beef with taco seasoning mix. I toss this with torn lettuce, tomatoes, shredded cheddar cheese, chopped avocado, chopped onions, canned kidney beans and black olives. I top with thousand island dressing.

We love to make chopped salad by combining greens and veggies chopped to about 1/3" cubes, diced ham, cheese and dressing of our choice. It's a nice change from a leafy green salad and makes a good dinner too.

I also found a great recipe for macaroni salad, which I make with Dreamfields Penne. It is on the epicurious.com site and is called "Modern Macaroni Salad." The best foods Canola Mayonnaise works well. I also used chopped sweet bell pepper instead of bottled pimento, no sugar added bread/butter pickles and I added a can of sliced black olives. Good stuff and easy on the blood sugar too.

I like to base mine around baby spinach leaves, mixed leafy salad greens, shredded romaine lettuce, alfalfa sprouts, and mung bean sprouts.

To be honest, I just finished one such salad. I added dry-roasted sunflower seeds (unsalted), extra-virgin olive oil, Annie's Naturals Goddess Dressing, ground flax meal, and topped with crumbled goat cheese. Cucumber would have been a nice addition, but I had none handy.

While eating the above, I found myself also wanting pitas and tabbouleh. Ah, well; another day.
