I'm trying to avoid cod, haddock, plaice etc as they are over fished at the moment. Pollock is a good Cod substitute, Mullet is a good fish, Garfish are great if you can get them (their bones are green!), i try to get line caught fish when i can as this method doesn't decrease the stocks too much.

MMMmmmmmm. Those patties do look good.

I make them with a smidgin of rolled oats, an egg, salt and pepper and sautee them in olive oil. I like them with fresh salmon, but if I use canned, I'm a wimp & crush up the bones with my fingers. To serve, I like canola based mayonaise mixed wil dill and sometimes I even make real tartar sauce using sugar free pickles.

I make the salmon patty mixture into walnut-sized balls and cook them for appetizers. Always the thing that disappears first. Everyone must love salmon.

We also like to grill our salmon (or broil/bake it) using a sauce made of Smuckers sugar-free apricot jam (1 part) and Chinese garlic and black bean sauce (2 parts) then we sprinkle chopped green onions over it to serve.

Hi gettingby.

The best salmon receipe I made is the following :

You take one salmon fillet and put it in a corningware style plate for the oven.

You put in the salmon fillet a mix of mayo mixed, parmesan cheese and cajun spices.

Finally, you add crushed ritz cookies as a topping and you put it on the oven for about 15-20 min at 350F.

ok, here is my fail-safe salmon recipe

Take salmon filet (prefer wild with skin)

coat top side with olive oil and Mrs Dash (I like lemon pepper)

Preheat oven to 250 deg

Heat cast iron frying pan to heinous temperature (high)

Add olive oil in bottom

Fry salmon for one to two minutes (that is all).

Move pan with salmon into oven. Hold for at least ten minutes.

The salmon comes out with crispy skin (yum) and not overcooked. Being held at only 250 deg it is fail safe because you don't have to worry out timing.

I serve it with butter, but then of course I have butter issues.

I enjoy mostly any fish but I too was traumatized by canned salmon. Mom attempted salmon souffle. Yuck!!! Still can't even think about any kind of salmon without gagging.

This one sounds kind of wierd but is really very good - a friend was making it for lunch one day when I stopped by & gave me a taste & now I eat it frequently.

1 salmon fillet
mustard (fancy mustards are good, but is even good with plain ol' yellow mustard)
lemon pepper

Coat fillet in thin layer of mustard, add lemon pepper to taste & cook - we do it in the microwave, but could also be baked.

One of my FAVORITES is:

Macadamia Crusted Salmon


2 salmon steaks (1 inch thick)
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 egg white
1/2 cup chopped macadamia nuts
2 tablespoons vegetable oil
2 tablespoons butter or margarine
2 tablespoons minced fresh parsley
1 teaspoon lemon juice

Hot cooked wild rice


DIRECTIONS

Sprinkle fish with salt and pepper. In a shallow bowl, whisk egg white until frothy. Dip fish in egg white, then coat with nuts. Gently pat nut mixture onto fish.
In a skillet, cook fish in oil over medium heat for about 6-8 minutes on each side or until fish flakes easily with a fork. Meanwhile, melt butter. Stir in parsley and lemon juice. Drizzle over fish. Serve with wild rice.

I either marinade it with olive oil, soy sauce and lemon and then grill it or cover it with honey (just a few carbs there) and Dijon mustard and bake it. Both are really easy.

Cheap Low Carb Salmon Cakes

I am not a good cook, but I discovered this because I want to have some salmon cakes and could not find a recipe.

I buy the very large cans of salmon. $1 to 1.50 each can so CHEAP. I mix 1/2 can with 2 eggs and 1 slice crumbled high fiber wheat bread. I make into 4 large patties and fry on a nonstick pan. Season to taste! (I like a little salt)

They are very easy and my BS doesn't go up at all!!!

Salmon Surprise

I have found that now that I am older (69), I like things that I would never eat when I was young. Celery for one and now salmon. I still can hack the Liver.
I read the salmon recipes and came up with the one I thought I would try. It was great (Yum).
Here it is:

1 small can boneless pink salmon
1 Egg
3 chopped green onions
Small amount of bread crums (from the box)
Some Garlic Power
Some Dill Weed
Some Dry Mustard

Made 2 patties and fried them in olive oil and butter

1 salmon fillet
White wine
Tarragon
Lemon juice
Garlic powder
Real butter
Black pepper
1 Hot Broiler


Melt butter and add about 1 cup of wine and the other spices. Brush on fillet liberally. Put fillet on broiler and brush frequently with butter sauce. DO NOT OVERCOOK.....it will dry out to salmon jerky. Red salmon is fantastic but King is good too. I have not tried it with coho but should be good too.

Serve with parsley potatoes and green peas.
