| | | I love salmon also! I take canned salmon,2 eggs and onions, and bread crumbs. mix it togetherlike a patty and fry it. Might not be low carb as I am learning about them now. It is yummy tho.

We have them once a week, but I don't know how to make them without a few carbs. I use one can for 3 of us, add an egg, as few bread crumbs (from a can) as I can use to have them stay together. Hubby likes me to add onions, but I can do without them. I add a teaspoon of dry mustard if I have it and salt and pepper. Then I just fry them lightly in a little oil or even some butter. The rest of the family likes fried potatoes and greens with them, I just have the greens. My Mom used to add dill seasoning, but we do not like it.

| | Thanks ladies. Last time hubby made salmon patties for me, my bg went through the roof and I didn't have anything to eat but 2 small patties.  I love salmon but the carbs don't love me.

| | | Mix 1 part soy flour with 2 parts flax meal, mix it well!
Use 2 eggs per 1/4 cup of mix, the eggs seem to grab onto the flax meal and the soy flour provides a bit of structure.
If you use veggies in whatever you are doing cooking out a bit of the water first is a good idea, too many water vegs seem to keep the eggs from grabbing onto the flax and soy.
I use this for Salmon patties, tuna patties, and meatloaf.
Meatballs BTW seem to be too small to hold together with this but salisbury steak works ok if you make them nice size.

| | | I also find the bread crumbs in patties too much so I take a can of red salmon, celery, 1 tsp. fine onion, 1tsp. pickle relish, tsp. golden mustard and mix with omega mayonaisse. Place on romaine leaves, add a couple of pieces of cucumber. Nice lunch. |

I make salmon for lunches by baking (Atlantic) salmon fillets and mushining them up with lemon-pepper and dill. |

| | | Quick and easy salmon recipe
For each person:
salmon fillet/pave
1 shallot sliced
1 /2 medium mushroom sliced( field mushrooms are even better- number depending on size,)
3 sprigs thyme per (1 left whole, 2 with leaves stripped from stalk)
bayleaf
olive oil + (optional) knob of butter for cooking.
Sheet Baking parchment
salt
pepper
Heat oil and butter if used
saute shallots for minute or so then add mushrooms mushrooms and thyme leaves. Cook until softened
Divide half the mixtute between the sheets of baking parchment
place fish on top, season
place other half of mixture on top with thyme sprig and bay leaf.
Fold paper over to make a parcel
Cook in preheated oven (190C) for 10/15 minutes depending on size of fish and how well you like salmon cooked.
Cooking in parcels is infinitely variable and works really well for fish. |

| | | Salmon patties--one of my favourite comfort foods. When I went low carb I started making my salmon patties without breadcrumbs or any starch added. I used to make them with cracker crumbs which is very good so if anyone has a cracker they tolerate you could try adding crushed crackers. I found that they do break more easily without crumbs or something but if I make them not too large, they come out ok. A couple break when I am not careful, but they still taste good! I just use some canned salmon, an egg and season to taste. I like dill so I add that but use the herbs you like and salt, pepper and a small amount of garlic. Mix well, form into patties and fry. I fry them with bacon which gives the patties a nice flavour.
Thanks to everyone who contributes salmon recipes. I love salmon and I believe it really is a healthy food. Unfortunately, I live in the middle of the continent now after growing up on the west coast so fresh salmon is not as fresh as it would be there. I will try some of the recipes here to get away from always eating canned salmon.

| | | Funny coincidence, I made Salmon Patties for our lunch today.
Here's my basic southern recipe.
2 cans of skinless, boneless salmon (the size of tuna cans)
1 egg
small amount of diced green pepper (about a tablespoon i'd say)
1 tbsp minced onions, hydrated
1/2 tsp minced garlic
lemon pepper seasoning to taste
1/4 c. cornmeal
Mix together well and form patties, sprinkling a little meal onto a plate to coat pattie. Fry skillet using with 1/2 olive oil, 1/2 canola oil, turning once (I don't deep fry them, just enough oil to coat the bottom of the pan)
This makes about 8 small patties or 4 large ones.
These don't seem to bother my blood sugar. I usually make a salad and some green beans to go with them.

| | A decent solution came to me tonight. DW was in Nova Scotia for the weekend and brought me a present. She visited the Balmoral Grist Mill and bought me a bag of stoneground oat meal. It has a texture similar to rough cornmeal.

My mom used to make them when I was a kid and I'd start crying when I came home from school and saw the cans of salmon on the counter. And mind you it wasn't a whiney cry it, it was a full out bawling like it was the end of hte world and I was going to die kind of cry. I hated salmon patties so much when I was a kid that I'm still traumatized by it.
That being said I've grown up a bit and will eat a salmon steak if its grilled, but only if its grilled, not baked, or poached or cooked any other nasty way that people try to eat fish! bleh lol

That said I would actually love to enjoy fish, those patties look soo nice John. I do like cod, halibut, haddock but never actually cook fish at home. My mother in law makes "fish cakes" with cod but I believe they are full of potato, I wonder if John/Linda's recipe would work with cod?
